Hey, Pete! Mise en place means "everything in its place." It's just a term for prepping your ingredients beforehand. You're gonna use green onions? Slice them before you start cooking. You're gonna use garlic? Mince it or crush it or whatever before you start cooking. That's what mise en place means. Have everything prepped before you start. Not everyone does it, and it's not really necessary in most cases, but it can make cooking complex recipes much easier.

Nick always has a great compilation of food that complement the others, but I personally think there's not much flow from dish to dish on Nick's side. He started off with Honey Wings, which is fantastic, I've never had fried wings like that before, but it's really sweet from all the honey I saw. His dishes flow from Sweet, to Savory w/ the scallops, and to sweet once more. And while he's a great chef, I'd have to go for the brothers' dishes. They had a transition from something savory w/ the Gnocchetti, where there's not much sweetness, to the Salmon and the lime rice. Lime, while its sour, has a little sweetness to it, and it just brings the combination of dishes together with the final part being ice cream w/ an oatmeal lace cookie. I think the brothers, although working separately, managed to pull off something that I think is amazingly thought out for an hour. Sorry Nick, still love you tho!
