A DAY AT HOME IN POSITANO & AMALFI AFTER THE LANDSLIDE | The Positano Diaries EP 94

It seemed like ages since we had all had a nice relaxing day at home. But at home there is always something to keep us busy!
I made a tuscan Kale and bean soup:
For 4 people:
1 big onion
2 carrots
1 stick celery
2 big potatoes
1 big bunch of kale
1 tin cannelloni beans
stock or broth
bay leaf or some thyme or whatever herbs you like!
Fry the onion, carrot, celery in a big pan with a slug of olive oil until soft. Add potatoes and chopped garlic, stock and herbs and leave to simmer for about 20 minutes. Add the beans, kale and more stock if necessary and leave for another 10 minutes or so.
Cook longer for a mushier soup!
We drove to near Amalfi and parked the scooter on the roadside near the big signpost for LONE (a suburb of Amalfi). We walked up the steps there and just followed the pathway along towards the town.

My Grandparents lived in the little town of Castilabate somewhere on the Amalfi coast but never had time to explore. Grandparents immigrated to America in 1906 with 5 children. Aerial shots with the music are my favorite. Seriously, I would have taken a sledge hammer to that pot. Holly has a new playmate, love it. The people who had to be helicoptered out, where do they live now? Can they ever go back? I have peppers, leeks, onions, garlic, lavender, spinach started - so excited - still have snow on the ground but 60's (Fahrenheit) this week, then back to 40's. Oh, that was so lovely in the end with the drone footage and the music in the background, loved it! What a nice walk you were able to do around Amalfi, that road really took a beating. I just saw a lady cooking some romanesco on TV and can't remember if you grow that in your garden. She cut it in steak forms, charred it in the skillet and then finished it off by baking it in the oven. That certainly was some job trying to get that palm out of it's pot, what an ordeal!
