This is the dish I saw you make on PBS a decade ago that got me into cooking. The first time I, a 14 year old, saw a chef make dish and thought to myself, “I can do that!” A few nights later, the results weren’t perfect (I needed a lot of help with the frying) but they were delicious and that first success made me confident enough to keep cooking. Now it’s one of my favorite hobbies, and I cannot thank you enough for starting me down this road.

God, this man made my childhood. My mom always watched him on TV and made a lot of recipes with us, just having fun in the kitchen. Now I'm married with an italian man and learning with Nick again.
