A tip for those of you with small hands and/or weak wrists: You do not need a full sized chef's knife just because "the experts" tell you to have one. You must be totally comfortable with a sharp knife for its safe use. My santoku knife has a 6 inch blade which handles nearly all my chopping and dicing tasks very well. My God, Nicole's knife belongs in a slasher movie.

Lots of flavour needed for spaghetti boll.... Firstly really brown the mince til crispy.. .. Add two grated carrots, chopped carrots, two grated zucchini, one cup mashed pumpkin, oregano, salt, pepper, sugar, one teaspoon curry powder, big shake of morrocon seasoning, big shake of Italian herbs, two large tins of tomatoes... Cook slowly for one and half hours... Now we are talking.

NOTHING WAS SEASONED IN THIS ENTIRE MEAL!!! All she did was coat that pot with some olive oil and throw in the veg. Then she poured wine & milk in the pot along with unseasoned beef plus those lawn clippings she calls bay leaf and 2 sprigs of thyme. I get lowering your salt in take, but that doesn't mean your food needs to be bland.

It’s lovely she is cooking! Browning meat means allowing it to really get braised and brown. This is where you get the richest, base flavours. You can NOT do that by throwing the meat in with tons of veggies, and then dumping milk on it before it’s browned. She thinks it’s ‘browned’ but that’s not how you get browned meat. What she got was barely dark grey, semi boiled meat 😬. Anyway, lovely recipe overall, but I’d fry the meat up first, letting it get a slightly braised brown to it, then shove the meat to the sides, and add the onions, carrots and celery to the center to cook a bit. Then add milk if one must, but not sure what the point of the milk is....? Also, the best time to add the spices and seasoning is when frying the meat ....

Mum, is that you? Ha, spot on comment - you have to brown alone in a large pan, patiently wait for the juices to evaporate (do not drain off) and the allow the meat to become deep brown almost frazzled. This is how you get real flavour!

None of has have ever been hospitalized (except when giving birth) We use onions a lot so they do not last more than a week. Store onions in your refrigerator at or below 40 °F is safe. You can buy "fresh" peeled and cut onions from most grocery stores that is "sealed" for safety. Things the food industry do and say to keep you buying. There is more bacteria in you open kitchen/pantry than your fridge.

CLASSIC BOLOGNESE SAUCE Regions: Emilia Romagna (Italy) Ingredients: Ingredients for 4 people 300 g of coarsely ground beef (folder or belly or shoulder fusone or spindle) 150 g of pork belly 50 g of yellow carrot 50 g of celery stick 50 g onion 300 g of tomato sauce or peeled ½ glass of red wine 1 glass of whole milk, a little olive oil or butter broth salt and pepper ½ glass of liquid whipping cream (optional) Melt, in a terracotta or thick aluminum pan, about twenty centimeters in diameter, the bacon cut into cubes first and then finely chopped with the crescent. Combine three tablespoons of oil or fifty grams of butter and the finely chopped odors and gently wilt. Add the minced meat and mix well with a ladle making it brown until it "sizzles". Pour in the wine and stir gently until it has completely evaporated. Add the passata or the peeled tomatoes, cover and simmer slowly for about two hours, adding broth when necessary; towards the end add the milk to soften the acidity of the tomato. Season with salt and pepper. When the sauce is ready, according to the Bolognese use, add the cream if it is to season dry pasta. For noodles its use is to be excluded. The only other memory I have of this woman is her and Paris spilling someone's ashes on their TV show and then proceeding to vacuuming it up. Such a contrast to this hahaha. I will try out the salad dressing for sure. Thanks for the video.

Her recipe? That recipe is what you find in the top search link on Google. It's a very basic recipe for a quick version of bolognese sauce. I don't see anything she added to it that makes it unique to her.
