Nigerian jollof rice recipe for 8-10 people

1 & half derica can of rice
2 pointed red peppers
2 medium onions
4 cloves of garlic
Ginger is optional
Scotch bonnet to your taste
2 fresh tomatoes, 1 sliced
3 tbsp of tomato paste
1 tbsp of curry powder
1 tsp of dried thyme
1 tsp of mixed herbs
2 tsp of paprika powder
Pinch of nutmeg
1 tsp of turmeric powder
2 tbsp of salt
Some bay leaves
200 ml of cooking oil
1 litre of stock or hot water
