Cow meat is called beef because in medieval Britain the social group that dealt with the animal (peasants) barely ever dealt with its meat, while the social group (nobles) who ate the meat barely ever dealt with the animal, and they used different words for the same thing which are both preserved in today's English.

"Why is chicken called chicken and cow is called beef?" When the Norman French ruled England, the peasants who raised the animals were English and the aristocracy who ate the animals were French. So the word for the living animal is English (i.e. cow, sheep, pig) while the word for the food produced by that animal derives from French: ox=boeuf(beef), sheep=mouton(mutton), pig=porc(pork). As for chicken, technically a young chicken is referred to in English as a pullet, while in French chickens are called poulet. But the middle English word for a group of small birds is "ciccen", so if they are being raised in a flock, the word "chicken" stuck around in English since the peasants raising them worked with them in groups, but an aristocrat eating them would get them one at a time.
