Chickpea Tuna Recipe
2 cans chickpeas, drained and rinsed
1/4 cup finely chopped celery
1/4 cup finely diced onion
2 tbsp chopped dill pickled
1-2 tbsp sweet pickle relish
1/4 cup vegan mayo
1-2 tbsp Dijon mustard
1 tbsp lemon juice
1/2 tsp dried dill
salt and pepper to taste
Mash the chickpeas into a flakey tuna consistency. Then transfer the chickpeas to a large mixing bowl and add the remaining ingredients. Mix well, taste, and adjust with more salt, pepper, or lemon as desired.
