Phenomenal cake. It really was worth the time and effort to lay out the apples in that pattern. I’ve been having the same issues baking cakes under pressure. One rose up so high it touched the lid, and I was really uncomfortable with that for safety. So I split the recipe like you did. But I just do them one layer at a time. I don’t have dual pans like those that stack. My question is: would you ever use the slow cooker function to bake? I’ve made Crockpot cakes before with great results, but not in the Ninja (yet). Cornbread is great in the Ninja because it rises up under pressure more than in the oven, but it has enough consistency not sink as it cools. In the 8 qt. Ninja, I guess you could bake anything you want because it’s so tall.

I just made some the other night in the Foodi that was dense and horrible. I’m sure it was the recipe’s fault, but it didn’t rise at all!

I just use a box mix for cornbread. But I try to whip the eggs up to soft peaks with a hand mixer before adding the dry and the milk. Then after adding the dry I whip the whole thing together another 3 or 4 minutes until it’s almost over the rim of the mixing bowl. All that extra air just expands as that heat in the pressure cooker gets to it. Plus I think the air conducts the heat into the center of the whole thing better than the thick batter alone. When done baking it’s necessary to let cool about 5 minutes before taking out of the pan. In that time it will pull away from the sides so it won’t stick there. Without the cooling it will just crumble apart it’s so light.

Ohhhh MY!!!!! So I bought a NF to use in my RV. Every time I tried to use it I would throw the breaker. I put it back in the box. Well I’m permanent now on a property with access to a full kitchen. To be honest I was very apprehensive about using it because I lost the instruction in my travels. I pulled it out a week ago today. I AM IN LOVE WITH THIS MACHINE!!!! Go ahead and LOL now. I made this cake and it turned out great even though I did most everything wrong. I didn't have my Fat Daddio pans yet so I did have an 8 x 3 inch one. You had said that your ceramic bowl didn't work, so I thought if I had a bundt pan it might. Didn't have one.....so I grabbed the small glass that dried beef comes in (all batter was now in pan) and buttered the outside of glass, pushed it down with the hole still on top, covered the cake with foil and set the time on HI pressure to 50 minutes and let it go 30 minutes without releasing pressure. It was beautiful. Next time I might shorten time to 45 minutes. I have a wire adjustable cake slicer so I sliced it in half and proceeded like I had two cakes. I did the caramel on my gas stove in a heavy pot because I am impatient. It was wonderful also. I will continue using this pan and glass even if I do get a bundt pan or the two from FD.

Is it ok to bake a single-layer cake in the large Ninja pan? I didn’t think about trying that when I baked a cake in a small pan on the rack, but I needed to microwave a mug cake with the leftover batter. Also, do we have to fill the bottom with water to bake something? Thanks.

You don't need water to bake, but sometimes adding water for a little steam is good for certain recipes. You can do a single layered cake, but you don't want it too deep or you will have trouble getting the center cooked through.

I made your apple Caramel and it sort of worked. My cake pans were too large and barely fit into the Foodi, so this was my fault. The apple topping did not hold together, maybe I didn't let it cool long enough. The bottom cake was too moist, maybe because the pans were too large. I put the cakes in the oven to make them a littler firmer. Otherwise, the cake did come out good and they tasted great. I will be trying to make the again.

raynemoonunit not that I have ever noticed. Just make sure to put the eggs in the steamer basket or on the rack, you don’t want them directly in the boiling water. They peel so easy!

You can switch to metric measurements in the written recipe card. Melted butter will act differently in the cake, I would use avocado oil instead. The pan grease is equal parts shortening and flour and 1/2 as much oil. Blend together in mixer.
