Niramish Sobji is a traditional Bengali mixed vegetable dish that is vegetarian and made without onion or garlic, often served during pujas or special occasions. It’s a wholesome and flavorful dish that showcases a variety of vegetables with simple spices.
Ingredients:
Potatoes: 2 medium, peeled and cubed
Cauliflower: 1 small, cut into florets
Carrots: 2, peeled and sliced
Green peas: 1/2 cup (fresh or frozen)
Pumpkin: 200 grams, peeled and cubed
Brinjal (Eggplant): 1 medium, cubed
Radish: 1 medium, peeled and cubed
Tomato: 1, chopped
Ginger paste: 1 tablespoon
Cumin seeds: 1 teaspoon
Bay leaf: 1
Turmeric powder: 1/2 teaspoon
Cumin powder: 1 teaspoon
Coriander powder: 1 teaspoon
Red chili powder: 1/2 teaspoon (optional)
Ghee: 1 tablespoon
Mustard oil: 2-3 tablespoons
Sugar: 1 teaspoon
Salt: to taste
Water: as needed
Instructions:
1. Prepare the vegetables:
Wash and cut all the vegetables as mentioned.
2. Tempering:
Heat mustard oil in a large pan or kadai until it starts to smoke, then lower the heat.
Add the bay leaf and cumin seeds. Let them splutter.
3. Add the vegetables:
Add the cubed potatoes, carrots, and radish first as they take longer to cook. Sauté them for a few minutes.
Next, add the pumpkin, cauliflower, brinjal, and green peas. Stir everything together.
4. Add spices:
Add turmeric powder, cumin powder, coriander powder, and red chili powder (if using). Mix well to coat the vegetables with the spices.
Add the ginger paste and chopped tomatoes, and sauté for a few more minutes until the tomatoes soften.
5. Cook the vegetables:
Add salt and sugar, then mix well.
Cover the pan and let the vegetables cook on low to medium heat, stirring occasionally. The vegetables should cook in their own moisture, but if it gets too dry, you can add a little water.
6. Finishing touches:
Once the vegetables are cooked through and tender, add ghee for extra flavor.
Give everything a good stir and cook for another 2-3 minutes.
7. Serve:
Serve the Niramish Sobji hot with steamed rice or luchi (Bengali fried flatbread).
