INGREDIENTS:
▫️5 Weetbix (we used gluten-free)
▫️1/2 cup sunflower seeds
▫️1/2 cup desiccated coconut
▫️2 tbsp Happy Way cacao powder
▫️30g Happy Way vegan choc pea protein
▫️2 tbsp date syrup or rice malt syrup
▫️2 tbsp water
▫️50g dark chocolate (optional)
DEETS:
▫️Place the weetbix in a food processor and blitz for 20 seconds
▫️Add the remaining ingredients except chocolate into the processor and blitz until the mixture forms a firm and doughy consistency.
▫️While food processor is blitzing line a loaf tin with baking paper.
▫️Press the mixture into the loaf tin and set in the fridge for 2 hours or freezer for 30 minutes.
▫️Optional-for the chocolate on the top, melt on the stove over a very low heat or short 30 second bursts in the microwave on 50% power.
▫️Once set, slice the Weetbix mixture into desired portions.
▫️Top the Weetbix slices with the melted chocolate.
