A new, easy trick - essentially zero cost - no extra tool required! The best way to bake sourdough bread without the heavy, bulky Dutch oven or injection of steam.
[Recipe]
100 g active sourdough
200 g water
270 g all purpose flour (11.7 % protein)
30 g whole grain spelt flour or whole wheat flour
5 - 6 g sea salt
1) Mix all the ingredients and rest 30 minutes
2) Stretch & fold or "pull & fold" as the video 30 minutes apart x 3 sets
3) Let rise to 1.5 - 1.75 times of size
4) Shape as the video. Place in banneton lined with a cloth & rice flour, wrap, freeze for 45 minutes, or cold retard in the fridge for 12 hours
5) Start preheating oven to 450 F / 230 C
6) Fold 12 " x 16" parchment paper or aluminum foil as the video to make the dough cover
7) Turn the dough over a piece of parchment paper, place on a cold baking sheet. Score the dough, place the above parchment / aluminum foil cover to completely enclose the dough. Bake for 20 minutes, then remove the cover and bake 10-15 minutes more or until golden
