Easter without dough with cottage cheese, cream and raisins. The easiest Easter recipe! Just mix the ingredients!
Ingredients:
For the cheese composition:
Cottage cheese (9% fat) - 500 g
Eggs - 3 pcs.
Sugar - 70 g
Semolina - 80 g
Cream - 50 g (two spoons)
Dried raisins or apricots, cranberries, candied fruits - 70 g
Starch or flour - two spoons
Vanilla sugar - one envelope (8 g)
Vanilla extract - one teaspoon
Lemon peel - a spoon
Salt - ½ teaspoon
For the top composition:
Eggs - 2 pcs.
Sugar - 70 g
Vanilla sugar - one envelope (8g)
Salt - ½ teaspoon
Cream - 200 g
Flour - 250 g
Vegetable oil - 60 ml
Baking powder - one teaspoon
We line a 23 cm diameter baking form (tray) with baking paper at the base and grease it with butter, including the walls.
We prepare the composition with cheese:
Put 500 g of well-drained cottage cheese in a bowl. Break the cheese with a fork and add 3 whole eggs, 70 g of sugar, two spoons (50 g) of cream, vanilla sugar, ½ teaspoon of salt, one teaspoon of vanilla extract, 80 g of semolina. Mix with a fork or an upright blender. The composition should NOT be creamy like cheesecake.
Add a tablespoon of grated lemon peel and 70 g of hydrated and well-drained raisins, mixed with two tablespoons of food starch or flour. We mix the composition and leave it aside for 15-20 minutes.
We prepare the top:
Put 2 eggs in a bowl, add a packet of vanilla sugar, salt - ½ teaspoon, sugar - 70 g and beat with a mixer or a whisk for 3-4 minutes.
Add 200 g cream (20% fat), 60 ml vegetable oil, 250 g flour and baking powder - a teaspoon.
Mix with a mixer or a paddle until we get a homogeneous composition, without lumps.
Pour the top composition into the already prepared pan, level it slightly and shake the pan a few times. Over this composition we gradually add (with a spoon in the center of the tray) the composition with cheese.
We put the tray in the oven preheated to 170˚C for about 50 minutes.
If it browns too quickly, cover the pan with a disc cut out of baking paper.
When the pastry is nicely browned, remove the pan from the oven.
Let the paste cool in the tray for 2 hours, then transfer it to a plate.
Optionally sprinkle powdered sugar. Let the paste cool completely.
Easter is ready! It can be cut into thick slices.
