I tried cooking a similar joint in the air fryer over the weekend and I have to say it wasn't as nice as simply boiling it. I found the texture to be rubbery and it was way too salty. When boiled ( changing the water half way through) the texture is nicer and not a hint of salt.

There are various different ways you can cook the gammon in the air frier so maybe try a different method, I don't think I would ever boil a gammon as it seems a lot of work, the joint I tried was just a cheap joint so I didn't expect to much..

I think the boil and finish in the oven method may be best.
