Ingredients:
Crust:
2 1/2 cups all purpose flour
1/8 cup white sugar
1/8 tsp salt
1/2 cup cold butter/margarine, softened but still cold
1/2 cup cold water
Buko filling:
1/2 cup coconut juice
1/2 cup water
1/4 cup white sugar
1/2 cup cornstarch
1/3 cup evaporated milk
1/2 cup condensed milk
1/4 cup powdered milk(optional)
2 cups young coconut, shredded
Egg wash:
1 egg
1 tbsp milk/water
Procedure:
1) Crust: Combine all purpose flour, white sugar and salt.Mix it well
2) Cut butter into the flour mixture
3) Gradually add cold water and mix after each addition
4) Gather it and form into a big ball
5) Wrap dough in cling wrap and chill for 1hr.
6) Buko Filling: Combine coconut juice, water, white sugar, cornstarch, evaporated milk, condensed milk and powdered milk
7) Mix it well and add young coconut
8) Cook over low heat until thickened
9) Turn the heat off and let it cool
10)Assemble: Roll out the 3/4 part of the dough into a wide circle
11)Cut excess dough and prick the dough with fork
12)Roll out second crust
13)Transfer buko filling into the pie crust and brush pie with egg wash
14)Cook over low heat for 1 hour(improvised oven should be preheated)
15)Cool pie completely before cutting
