Thank you for watching my no wrap pulled pork recipe. Who doesn't love pulled pork, especilly Caroline BBQ? On my first video where I compared Texas pulled pork with Carolina bbq, I didn't feel I represented Carolina bbq correctly. I spoke to one of my subscribers (David) that's from North Carolina and read lots of comments on what makes Carolina bbq so I felt I did a much better job representing Carolina on this video.

For many years I wrapped pork shoulder at about half way. On the advice of a friend, I tried it unwrapped and I will never wrap it again. Plenty of fat to keep moist, and the extra flavor is great,

If you ever do get to North Carolina for that bbq tour, the 4 kings of NC 'cue are Lexington BBQ (aka Honeymonk's) in Lexington, Red Bridges BBQ in Shelby, B's BBQ in Greenville, and Skylight Inn in Ayden.

you do know Carolina (both of them) have at least 3 different variations? all refers to Pork...but Eastern NC (vinegar based), Western NC (more Red Saucy), and South Carolina BBQ - Mustard Based

Thank you for the re-do. I was happy to see that you included the preparation methods used by folks in North Carolina. Chopping up the pulled pork matters. My father was from North Carolina so this is the style I grew up with. The vinegar cuts through some of the fat that otherwise coats your tongue and deadens your sense of taste a bit. That is why you get that punch of flavor. I actually prefer a mustard based sauce for ribs as it does the same thing, but compliments the rib meat a bit better. I smoked a plate of beef short ribs Texas Style for the 4th of July and they were amazing. Not my words but my guests. I humbly agree with their assessment. As a classically trained chef, I have found the places where you find the best and most plentiful of a certain ingredient tend to know how best to prepare that ingredient so North Carolina being the king of pulled or chopped pork and Texas the king of all things beef is no surprise. Other parts of the country can turn out some bodacious BBQ but when it is done right I will take Carolina pork or Texas beef anytime. Taking a Carolina BBQ tour is the perfect way to get to know and appreciate this outstanding regional cuisine. You will come back a changed BBQ man.

I have to agree, Joe. Whenever I've had NC vs TX pulled pork sandwiches, there's just something about that vinegar-based sauce that takes it over the top :)

Nice video my Carolina bbq had more crushed red pepper & black pepper in it . I really liked all that pepper in it, it wasn’t to much, just right. I have been requested to do another one for people at my job

Looks great bro. You cooked specifically Eastern NC bbq. Not sure if you used my sauce recipe. But it would be as authentic as you can get. I grew up in ENC and still here today. It runs through my veins. The difference between Eastern NC and Western NC is ketchup. We don't use it in ENC.

Dave, I have a PitBoss 1600. How would you recommend placement of the pork butt in relation to the firepot for smoking? Shelf in or not?

I went to North Carolina to visit some friends and I got a pulled pork sandwich. I didn’t like it the one I had had a super strong vinegar taste. So maybe I need to give it a shot myself but I like Texas bbq best!

Probably eastern NC style. Lexington style is Western part of state and will have some tomato and brown sugar in the sauce and rubs. Not to the point of a thick sauce. Just flavor to the vinegar base

True, ironically Virginia was barbecuing before NC, in the very early forts built by settlers. And now VA doesn’t have a characteristic barbecue...

I just cooked a butt Carolina style just the way the gentleman from Carolina said to do it. Turned out very good think it was of my best chopped pork sandwiches. I liked his sauce, I will watch this video when I get home from work

Hey Joe - I’m with you 💯 on this one. This was a great redo comparison video. When I was in my early 20’s my first experience eating smoked pork was Carolina Chopped BBQ w/slaw. My girlfriends mom who was from North Carolina would make it. I love all types of smoked pork but, Carolina Chopped BBQ will always be my favorite. I’m always looking for that vinegar flavor when eating smoked pork, it balances the flavor of the fatty pork. I love that pepper based vinegar sauce. Thanks for sharing.

Joe, that Carolina sauce needed about a tablespoon of brown sugar. Now imagine chopping and mixing all the different parts taste and textures of the whole hog into a sandwich ..... that is Carolina pulled/chopped pork.

Respect for going through the trouble of redoing this and also mentioning that while closer, it's still not the authentic method. I agree this is closer to Eastern North Carolina preparation but like you said we generally cook whole or half hog over open flame to get 'cracklin' to chop into the mix. We do also put sugar in the sauce, albeit a little less sugar than (Lexington) Western North Carolina style. It's also very common to see a hot sauce such as Texas Pete added for flavor depth as well but not always the case. You can find one of the most representative examples of Eastern NC BBQ in a video called "The Legendary Skylight Inn's Whole Hog BBQ" by the channel Munchies, and also "Anthony Bourdain A Cook's Tour Season 2 Episode 7: The BBQ Triangle" by the channel GoTraveler. I have eaten BBQ all over NC and Mitchell's and Skylight Inn are a couple of the best representations. Another good video that shows authentic Eastern NC BBQ is "The Pit Authentic Barbecue in Durham | NC Weekend | UNC-TV" by the channel "North Carolina Weekend on PBS NC" which showcases a BBQ place that I frequent quite often since it is the one closest to me. After watching all those videos one can see the common threads of must-haves for it to be considered genuine NC style, otherwise it's just pulled pork. But what you have cooked here looks mighty tasty and I wouldn't complain a bit if handed a plate of either style.

Great stuff, but Vinegar with chopped Pork is gonna win every time. If you sauced that Texas pulled Pork in advance of the sandwich though with a good ol' Texas sauce I bet it would have given it a run for its money!

I've made this recipe three times now and everyone who has tried it agrees this knocks it out of the park. At one time, I looked at taking a job in Raleigh NC, and by marriage, I have family there. What I found is that a Carolina style pulled pork sandwich is normally topped with coleslaw. Just your garden variety recipe, but I prefer a vinegar based coleslaw.

I like my Carolina BBQ sliced, Bullocks bbq Durham North Carolina. Lexington bbq is Ronald Reagan favorite bbq and mine too. ❤❤❤❤❤

No pulled pork in NC! I think pulling it destroys the texture. The best in Greensboro was Casey's, sadly the Casey Bros aged out in the middle 1960s. Their sliced pork was peerless! Smoked in immaculate stainless steel vertical racks behind the store-length counter. Sauce was drippings with cider vinegar and r. pepper flakes adjusted to taste. Tangy, not incendiary - but you can adjust it as you wish. Great slaw and pork was as tender as the steamed rolls. Stameys was second best but that was decades ago.

If you could add just a little brown sugar or molasses and a little bit of ketchup in that sauce and simmer it for a few minutes it would help a lot. Also if you're able to catch some of the pork drippings during the cook and add some pig grease to that sauce youd really have something. Thanks for trying again this was a little more realistic. Try it on some good soft white bread with a thin layer of dukes mayonnaise and some slaw. Now that's a Carolina BBQ sandwich mmmm. I have to give the props to Texas for the amazing Beef Brisket Beef Ribs and sausages though. The rest of the country can learn from texas for sure

Great re-do. Im not totally surprised by the results. Texas does beef, The Carolinas do hog. I have only one suggestion on this cook. I couldn't help but think a nice cross hatch score in the fat cap would probably help crisp up the skin without any need to flip the meat and probably help get some more flavor to the meat. Im going to try the Carolina sauce next time I do a pork shoulder with the cross hatch. Great video sir.😃🐖🍻

I have a 20 lb turkey im planning on smoking and it's been awhile since I have done a pork shoulder so I think I'll throw that in my 2nd WSM and do it with that Carolina sauce and do a 1" square cross hatch. A diamond pattern would look cool also but in the end it all gets shredded so it don't matter. I'll let you know how it turns out. 😋

OK... If I can' t move to Texas and buy a house next to Joe's, the next best thing is to make some my own Carolina BBQ. My grocery store butcher had some boneless pork butts in the case (average 3 pounds) so I decided to go for it. I cooked it on my Yoder Ys640s at 275 with a bump up to 350 for 45 minutes at the end. Total cook time about 7.5 hours. That's a lot longer than I expected. I cut the rub and sauce to about 1/3 (Joe said his cuts were around 10 lbs). It's a little salty so next time I'll cut the salt back. But other than that... DELICIOUS!!! I definitely hit the stall around 160... I took it off at 199 and it was a little dry. Adding the sauce perked it up and it was just right in terms of moistness. Smoke ring and bark - amazing.

Wow, this was a very interesting comparison between the two recipes compared to your previous video on these two styles of pull pork. One thing I must have missed, what is the recipe for the Carolina sauce? Again, nice job in getting the neighbors involved in the blind test, thank you.

Thank you Steve! I used 12oz of apple cider vinegar, 1 tablespoon of black pepper, crushed red pepper and salt. Super simple.👍

Thanks joe for another honest comparison...I’m sure we would have a hard time competing against Tx. Brisket. NC uses 2 kinds of slaw.....Coleslaw down East and BBQ slaw here in LEXINGTON. Most folks around here prefer BBQ slaw, but in the Eastern part of the state they like coleslaw with the “dip” that you made. In Lexington we use a dip with a little more tomato base to it. My wife and I make our own sauce/dip, because I cannot find a good one and I refuse to use anything with liquid smoke in it. Would love to send you a jar just to get you opinion. Send me your address and I’ll send you one. Will be firing up my 480S Saturday to do 2 butts. Hope they come out as good as all your cooks. Stay safe! Hank

I cooked a few briskets last weekend. Texas style. I decided to get me cleaver out and chop up the point on one. Threw some bbq sauce on it, mixed it. Best fang bbq sandwich I have made yet. Never thought to chop up the point

Please don't douse your shoulder with 8 oz of BBQ sauce during the cook and call it "traditional NC BBQ". It's so cringe. Spritz with water/ACV if you want, save the sauce for serving. Also, know this video is recreating Eastern NC BBQ but using pork shoulders when whole hog is traditional. Western NC uses pork shoulder with a sauce with a little tomato in it and a red slaw - just as traditional and just as delicious.

Also, you say repeatedly "Carolina style" a lot in this video. Besides the two NC styles, there is a unique SC style with a mustard-based sauce. To me, "Carolina style" is pork with a thin, vinegar-based sauce that might contain no tomato (Eastern NC), some tomato (basically ketchup) (Western NC or Piedmont) or mustard (some parts of SC). All are delicious to me but to natives of those areas, they might not appreciate being lumped in with the others.

Born and raised in NC. I think you did justice with both of your Carolina style Pulled Pork BBQ. The second being the more traditional Eastern NC. The first being a bit of a refined and tweaked variety to try and impress judges. There's something to say for going with tradition.

I live in NC, they mostly use propane around here.Personally I like smoke on my BBQ and subscribe to the theory that if its good enough,you dont need any sauce.The effort for me involved in making great BBQ is for me diminished by adding vinegar
