this was the first recipe I ever cooked from Ottolenghis Books and it got me hooked instantly. I cooked three times in 2 weeks... one of the best tastes I have ever tasted!!

My extra-firm tofu and black limes have been waiting for this recipe, Noor! Contrary to my usual urges, I wouldn’t change a thing. I just need the spinach and parsley (and maybe an equal amount of coriander), then I’m off to the kitchen!

I made this for dinner tonight and we all fell in love with this dish! Thank you so much for your great explanations and recipe. You mentioned that the black lime could be infused as a tea, you just add boiling water?

To make black lime tea roughly crush or break apart 2 or 3 dried limes and remove any seeds. Add to a saucepan with about 1 litre of water and bring to the boil. Lower the heat to a gentle simmer and simmer for about 7 minutes. We wouldn’t do this for much longer as it’ll taste too bitter otherwise (it is already quite bitter). Then strain it, add sweetener to taste and a fresh squeeze of lemon juice and some fresh mint. Enjoy!

Yes but sometimes citric acid is added so check the ingredients.

Is it possible to bake the tofu instead? Is the recipe in one of the books? Thanks!

Yes, you can definitely bake the tofu. Toss the tofu in the cornflower and some oil and place in preheated oven (200C fan) for about 20 min, turning the tray half way through. The recipe is in Flavour! Enjoy!
