When the hot water inside the coolant system cools down, it "shrinks", creating a vaccume in the coolant system, which sucks the water from the overflow tank into the radiator. Theres a valve in the radiator cap, allowing that to happen, so if you had left the radiator cap on, it would've returned back to the radiator on it's own.
