I love seeing people appreciate German buttercream. Not enough people know about it in my opinion. :D A little note for anyone who wants to make it: you can do so many different flavours of this by simply swapping out the milk used for the pudding for something else. I love making fruity versions by swapping it out for fruit purees, like for example raspberry. you get such a strong (and real) fruit flavor that way. it's amazing. :)

I will wager there are many whom find new ideas here.. such as myself , that have cooked for families for half a century. Thank you for encouraging youngsters to try making foods from scratch. Family is what keeps this country strong.

That sound’s like a version of frosting I’ve heard called “Russian buttercream.” I’ve not tried it, so I don’t have anything useful to contribute.

For chocolate, how much cocoa powder should I add? 2Tbs perhaps?

I would make the pastry cream chocolate by stirring in some finely chopped chocolate in the same step where you add the butter. How much depends on your preference, but I’d probably do somewhere between 2-4 oz. Adding cocoa powder until you reach the desired color/flavor at the very end of the recipe would also work, but will add some bitterness and you may need to add more powdered sugar this way. I hope this helps!

My buttercream came out super soft and not pipeable. I refrigerated it and tried reshipping it but it never came together to look like yours! I'm familiar with meringue buttercreams so I'm not sure what I did wrong here!

@@SugarSpunRun It looks like the same consistency of yours. It was definitely coating the back of a spoon. I tried refrigerating it and whipping again and it just came out like melted whipped cream
