Grandma darling , I know an Italian eggplant recipe from my own grandma where you don't have to peel the skin ! Kevin ...Here's the recipe from my grandmas kitchen to yours !! Make this in another cooking show? Oil a baking dish. Cut the eggplant in half. Spoon out the inside part of the eggplant halves and place the scoopings in a separate bowl. Put the two peel halves (unbroken please ! ) in the oiled baking dish Cut the inside part in small pieces'...or dice add 2 eggs tsp oregano tsp brown sugar chopped fresh basil or tsp dried basil half tsp salt half cup oatmeal quarter cup bread crumbs quarter cup grated cheese 2tbs olive oil half cup chopped onion (optional) 2 garlic cloves (optional) Mix well Put the mixture into the two eggplant peel halves Put mozzarella slices on top drizzle with olive oil Bake at 350 for 35 mins Skins are VERY soft and edible !! Serve with your favorite pasta sauce and add more grated cheese on top !!! YUMMY
