this isn't technically a what I eat in a day. But here's some example meals that you can make and use as a guide to make some lovely meals, perfect for when you're after inspiration but need something simple to make.
MEAL 1: Protein Porridge with Blueberry Jam
50g oats
200ml oat milk
30g vanilla protein powder (the one I used is from Form, or go to AWESOME SUPPS or MISFITS)
50g blueberries
Squeeze of lemon juice (not too much)
1 tbsp agave syrup
20ml water
MEAL 2: Sticky Spicy Chick'n Noodles
250g ready to wok noodles (I used udon)
200g vegan chicken (I used Heura)
1 red pepper
3 spring onions
1 clove garlic
2cm ginger
1 tsp gochujang (or 1 tbsp sriracha sauce)
1 tbsp apple cider vinegar
2 tbsp soy sauce
1 tbsp tomato paste
Splash of water (helps cook the noodles and deglaze the pan)
