I've had great success with this yeast & harvesting for up to five generations of re-pitching with no problems. It also handles fermenting under pressure at circa 15 psi. I've found that cold crashing below 10c causes a chill haze that is difficult to clear. My go to yeast for hassle free brewing. Love your work David. Cheers.

Hi David, long time no chat. I hope you are doing well. Thanks for this video. Im goint to make a Vienna lager and was wondering if i needed to make a starter with this Nova lager? My OG target is 1.052. i was thinking of making a 1 liter starter anyways so i could save some of the yeast. Would i be better off making a 2 liter starter for saving some? Thanks for all of your advice. It is comforting to know that someone like you are always available for answering questins and keep us on the right track. 🥂 David

Hey, Nice to hear from you and I hope all is good for you too! Sorry for the late reply, I am on a pretty hectic business trip currently. I would not make starter, I would pitch as normal and then later top crop the yeast instead. I have a top cropping guide that will show you how and will explain the benefits.

Thank you for the concise review. I'm excited to brew with this yeast as I'm a "stove top" home brewer and lack the refrigeration capabilities required to use traditional lager yeast. I just placed an order for ingredients to make a Kellerbier. This seems a good "bridge" style for this yeast and for people like me who prefer ales.

I needed to fill out an order, and I added NovaLager (I had originally had 34/70 in the brew sheet). It came yesterday. I brewed today, but it would be unfair to make a comparison test as I am using a new kettle and induction cooktop. This brew will serve as a baseline for efficiency tests in the future...

Thanks David informative as ever. Pitched Nova into my Cali Common and 82% attenuation after 2 days at 18 Celsius, this yeast works fast. Will be interesting to see what it tastes like.

Dhanks David , Very informative but ! If I'm going to fermenter around 12°c would you recommend pitching slightly higher and working down or slightly lower and working up ?

Yes, use the high end of the pitch rate when working with lower temperatures.

@@DavidHeathHomebrew thanks David, sorry but I wasn't very clear with my question, what I meant was if I ferment at 12 degrees would it be better to picture to pitch at a slightly higher temperature and reduce it down to 12 degrees ? I know it ferments pretty quickly but I'd like to slow it so I can better judge when to add pressure.

Kegging my first Nova Lager Italian Style Pilsner tomorrow. I was surprised by the short onset period despite the lower pitchrate compared to the 34/70. In the final beer I will mostly look for the difference the biotransformation will make as I brewed the same recipe in 2 months ago with 34/70. Hop used in both beers was Experimental Amira.

What is the best way to use Novalager, under pressure with a spunding valve? Or treat it like a Ale yeast at 18c in a standard bucket fermenter, no pressure?

Both will work. It will be cleaner under pressure though.

I wonder how this would do with a Baltic Porter or the like? I’ve been using Lutra for it and it’s been fantastic thus far but a proper lager yeast might be nice

Thanks David. Interested to know if this is a game changer for you in terms of neural strains of kviek. I have been using lutra with great results on many of your lager recipes. It generally takes me 7 days from grain to glass. Do you think you would choose this over lutra for a quick turn around lager moving forward ?

Better? How is it better? It is an ale yeast for comparison. Novalager is a lager yeast.

Yes, the usual guidance of max 14.5 PSI is suggested. I personally go lower at 12 PSI.
