Peppers are easy to germinate in coir seed pods but you need to keep them moist, warm, and don't plant too deep, maybe 5mm only. Keep warm by sitting on an applicance like a dvr or with a seed heating pad, ideal temp about 80 degrees. Super hots like habanero can take a full month to germinate but usually if it takes that long the temp is too low, for most varieties its 4-7 days. Once germinated be careful not to overwater super hots and cayenne seedlings and keep room temp. For some reason they wilt easily if overwatered or if they get too hot until well established. But most other varieties are stronger earlier. All peppers need a lot of grow light early on to thicken up and do best in the transplant if you harden them off or put them in larger pots and grow them outdoors before moving them into the ground. They like fast draining soil but have to be watered 3 times daily in the desert sun because the roots are very shallow so you'd have to experiment with watering schedules in your own region. They get nice and bushy if you cut the top leaves early in their development after maybe five or six sets of leaves appear on the seedling and that helps thicken the trunk too.

How I got my spinach to germinate, is after I seeded them in my nursery tray. I put a thin layer of straw over them to lock in the moisture. I now have spinach everywhere 😂
