I tend to under cook the eggs to soft whilst letting the broth finish the eggs and absorb the flavors. Sheer glamour. So glad you use chicken breast because legs,skin etc will make the soup fat, greasy that you see a lot in Soto Ayam. Its suppose to be a fresh soup. Lovely complexity with white pepper and coriander often forgotten in western style Soto Ayam .

Hi there thank you for your observation 😃We live in a beautiful area of Sanur, surrounded by rice fields and so we always have lots of interesting insects buzzing around. We do not use chemicals to eradicate them we prefer nature’s way and so just invite all the frogs, toads and chit chats to gobble them up 😋
