Caprese bruschetta & honey chilli chicken.
On the 11/05/2023 with the help of 5 x 5th/6th year students we put together sliders to cater for over 100 parents prior to the James Joyce evening in the O'Reilly theatre.
Using whole food ingredients including some from our very own urban farm here in the college we put together the menu in the video above.
Ingredients for bruschetta:
- Sourdough bread
- Mozzarella
- Belvedere college pesto
- Belvedere college micro basil
- Tomatoes
- Balsamic vinegar, olive oil, honey salt
Directions for bruschetta:
- Start by making the balsamic glaze, heat a pan over a low to medium heat add some balsamic, oil & honey and cook until the mixture reduces down into a sticky glaze
- Finely chop the tomatoes and add to a large mixing bowl with plenty of olive oil, balsamic & salt. Mix well to ensure all the tomatoes get coated in the balsamic & oil mixture
- Toast the bread, spread a tsp of pesto over each slice, add some tomatoes, slices of mozzarella
- Drizzle some of the balsamic honey glaze over the top & garnish with some fresh basil
Ingredients for the honey chilli chicken skewers:
- Diced chicken breast
- Sriracha sauce
- Belvedere College honey
- Diced red sweet peppers
Directions for the chicken skewers:
- Marinade the chicken in sriracha sauce & honey
- Add to a pan over a medium heat and cook until the sauce reduces down to form a sticky layer around the chicken (cut the biggest piece of chicken in half to ensure all the chicken is fully cooked)
- Chop the peppers into square pieces and cook under the grill for ~15 mins
- Skewer up; chicken, pepper, chicken, pepper, chicken, pepper
- Garnished with some fennel from the urban farm to finish
