Great summer dish. You can use Belvedere honey & pesto to make this one.
Ideal for lunches or a great pasta salad to have for those BBQ's !
Ingredients
- 400g fresh pasta of your choice (spaghettis or tagliatelle works well)
- 1 red onion, diced
- 2-3 cloves of garlic, diced
- 1 red pepper, chopped
- 1 packet of spinach, washed
- 300-400g of peas, boiled
- 1-2 tbsp’s honey
- 1 tbsp soy sauce
- 150g basil pesto
- Parmesan to garnish
- 1 tbsp olive oil
Directions
- Bring a pot to the boil and cook your fresh pasta for 2-3 minutes (if you use dried pasta, allow 10 minutes for the boil)
- Bring a pan to a medium heat and add 1 tbsp olive oil
- Add your onions, garlic and pepper and fry for 3-4 minutes before adding your peas
- Add honey and soy sauce, simmer for 5 minutes
- Slowly add your spinach and cook until it has wilted down
- Mix the content of the pan with the pasta and pesto
- Garnish with some parmesan and your good to go!
Serves 4-5
