Any chance I could get an explanation why the meat isn't seared in this process? Since searing would add deeper flavour to the soup through deglazing and better color on the pork

Bak kut teh is a broth based dish which focuses on the Chinese herbs. Also, when making Chinese soups, the meat isn't normally seared but simply simmered for many hours. That gives the deep flavours which are well known in Chinese soups. Hope that explains :)

Hi dear, love your channel💕 is there any difference cooking BKT in cast iron or pressure cooker? If pressure cooker it will be done in 20mins instead of 4 hours and also using gas the soup alwiz recede!

Thanks for the support :D Yes there is. Personally, I find stews work best in a cast iron dutch oven compared to pressure cooker. Pressure cooker is great if you don't have much time. However, the distribution of heat in a cast iron dutch oven is way better and that helps with the flavour immensely. Also the broth doesn't really reduce so much when cooked in a cast iron dutch oven especially if it is of good quality with a heavy lid. That locks and stores all the goodness within the pot. While many claimed to have eaten bak kut teh without any issues, I would suggest to avoid it as the herbs are said to be "heaty" for the body. You can always check with the Chinese medicinal hall for more information.
