So Glen your saying Aged cured is not good.. On the farm we hang beef for 10 to 14 days Sheep for 7 and Deer/Pigs for 7 all in a cold kill shed we make all our own small goods and have had no problem at all.. I would like to know why you say get it to the butcher asap... Cheers John...

John I think you have miss understood what I am saying. Butchers want fresh trim to make smallgoods.(plain and simple) I agree you hang beef & sheep etc for 10 days to age them to get tender steaks and roasts!! But quality sausages need to be produced from fresh trim so they will keep longer in your fridge or your next hunting trip. Trim thats already 10 days old is getting to the end of its shelf life, turning it into a sausage only hides the problem. Fresh is best, the longer you keep it hanging the more it is decomposing its as simple as that!
