I epoxied the gravel into the bottoms of my larger display tanks at my store, I found that mixing the gravel with the epoxy in a bucket first works better than doing it in the tank, than smooth it into the bottom of the tank. Once the epoxy cures you will want to put a layer of loose gravel on top because you can't get the algae off the glass around the edge of the gravel because it catches the sponge. It looks nice though, and big fish and cichlids can dig to their hearts content without ever showing the bottom of the tank. All the benefits of a bare bottom tank with the asthetics of a gravel bottom.

In an acrylic tank they bow when filled and relax. Wouldn't there be a potential issue with an epoxy bottom? I imagine a seam popping

You put black electrical tape along the tank, beneath the top "list" to hide the surface. I have done it on most of my tanks. Sometimes only one row, sometimes you need several.

Bottom of your tank should be on a fixed stand so it shouldn't move. In theory. This would be an experiment I have no idea

It'll be above the water. Would be just as much risk as bigrich falling on the dog bone in his speedo while he's getting in the hot tub 😂. In other words I don't see a problem. The stand will actually act as a giant cave for the fish to hide under too!
