The reason behind the aloo in Kolkata biriyani is, there was a time when first potato came to India and that time it was itself an exotic vegetable which was so costly. King Nijam was so caring about the artistic of food and he ordered his chefs to add an exotic vegetable and that time the only vegetable goes well with the biriyani is only potato ( aloo).
