Love the walk through! Agreed with everything you did. You seem to get a good one there. Mine had smoke leaks all over the place, but easily resolved with some gaskets. Enjoy cooking bbq on your Pecos! I've had mine for 4 months and it's been the best bbq experience of my life :)

Cooked on mine yesterday for the first time. Used Royal Oak Lump (no B&B at Academy) 1st mistake, I used the seal strip didnt help much. Was wondering what kind of gaskets did you use to seal your grill. Also going to try a few Kingsford coals as starter and Wood splits for the entire cook. Three brisket in the freezer with Old Country name writen all over them.

I picked one of these up two days ago. I burned a fire at or about 500 degrees for three hours today to burn off the manufacturers goop that was on there. Tomorrow I will clean and season. I didn't think that a fire that hot would cook the oil into the steel... I will know tomorrow for sure. I liked this video and appreciate your time. I wish I had found it sooner.

Yea it’s just like seasoning a cast iron skillet. The oil should cook into the steel just fine.

It seems counterintuitive to put soap and water on a smoker but seeing one in person at the store. You quickly see all the machine oil and other products that shouldn’t be in there . So yeah I’ll be doing this too I think. Good idea. I am buying the OC Wrangler smoker this Thursday. Can’t wait.

That is to rest your wood on and heat it up a bit before you through it in. Also, hint, get a bigger grate to raise the wood up higher. It will let the air get under it and give you better results... Happy BBQing!

I've had mine for almost a month now and cooked on it yesterday for the 1st time. Size and convenience 2 thimbs up. Smoke leaks 👍🏽 and that was with seal strips gonna try and use some gasket seals in the future

Couple of questions, Did you oil the entire inside of the firebox and the grate that holds the wood? And, what about oiling the outside of the pit also, isn't that supposed to help keep it from rusting?

Yes, I oiled the entire inside of pit including grates. I didnt oil the outside. I just keep it covered and out of the weather the best I can.

Hey @Kenny Richter! I'm curious if you ever wish you had the Brazos instead of the Pecos? Do you think it's better to buy the Brazos with thicker steel and top shelf already in? Do you the Brazos is worth 2x more than the Pecos as far as performance and value? I'm torn between Pecos to save money or Brazos for the possibility of better performance and long term value over time. Here in CA its $850 for the Pecos and $1600 for the Brazos when I factor in tax and gas to pick it up 3hrs from me, so it's a big investment but I dont want to drop $3k+ on a custom since I'm new to stick burners. Would love your thoughts, thanks!

I had the same problem in deciding what I wanted. I don’t ever find myself wishing I had the Brazos. My Pecos does an amazing job and for the price you just can’t beat it. The Brazos has the thicker steel, so it’s going to hold a consistent temperature better than the Pecos. The Pecos does a pretty good job still. If you have the extra cash to spend on the Brazos then go for it. The Brazos IS better, but the Pecos is a really good smoker too. The Pecos is an awesome grill that you won’t be disappointed with. It’s a great price for what your getting. Cheers!

You can’t go wrong with either of those grills. The brazos has a lot thicker steel, so it will hold a more consistent temperature. The Pecos is alot cheaper though and you still get a nice heavy gauged pit. I haven’t noticed much fluctuations in the temperature in my Pecos, so I’m still REALLY happy with it.

I haven’t done a brisket yet on this smoker, but I’ve seen other people do two at a time. I even saw a guy do three but they were smaller briskets. It kind of just depends on how big the briskets are.
