Thanks for the wonderful recipe. I am from Greece, I like making desserts, especially desserts from other countries that we don't have here. But I was really interested about what you said about superstitions and traditions around this dessert. The reason is that we have similar traditions with desserts of ours here, such as the number of ingredients or the coin in a pie for the lucky one.

You can make the pudding using the recipe and then place the pudding in a steamer set over a saucepan of simmering water and steam the pudding for 8 hours. Do make sure you keep a regular eye on the water underneath and top it up with boiling water from the kettle from time to time. All the best Mr D

Hi Fabiola, Thank you for your kind comments. Yes you can age the Christmas pudding by the following methods: FIRST METHOD- Store the pudding in a cool place (maybe under a bed in an unheated room) away from the light in its bowl. I would only have greaseproof paper touching the pudding for storage and then foil over the top of this with string. If you wish give it a splash of liquor every week to keep it moist.

SECOND METHOD: You can freeze it by taking it out of the bowl, wrap well in cling film, then in foil before freezing. Use within 6 months. I hope this helps but if not please let me know

I like to see you using the old-fashioned recipe with the suet. To be honest, I always thought the suet was the fat, but it looked like it was dry when you poured it in the bowl. The recipe seemed simple enough, too, so I think we can try it.

Hi Charissa Suet is in fact made from fat but you could also use Vegetarian suet which is made from refined vegetable oil. Vegetarian suet readily available in UK can replace regular suet in any recipe. As you say the recipe is really easy to make and the pudding will get better with age. You just need to keep it in a dark dry place and feed the pudding from time to time with a little brandy or whisky.

Hi Magic Universe, mixed spice ready made and you buy it in a jar like other spices and the contents vary depending on which make you buy. The one I used is Bart and contains a mixture of cinnamon, cloves, ginger and nutmeg. Please not it is different to five spice used in Chinese cooking. If you want to make your own here is a slightly different mixture that would work well: 1 tbs ground allspice 1 tbs ground cinnamon 1 tbs ground nutmeg 2 tsp ground mace 1 tsp ground cloves 1 tsp ground coriander 1 tsp ground Ginger Blend all spices together, and store in a sealed jar away from light. Hi Loren, Yes it cooked through perfectly and the picture at the end of the video is in fact the pudding. The Mr D's Thermal Cooker will hold the temperature above 65C for over 7 hours as long as it is at least 80% full. The texture was just like a conventionally cooked pudding. Hi Maria, Thank you for your question. No you can't cook it in an oven but you can steam it by putting it in a steamer. You will need to let it steam though for 6 to 8 hours. During this time you will have to probably top up the water as it will evaporate. This you would not of course have to do with a thermal cooker. All the best, Mr D

Hi that applies to a lot of places in the world. Butter would not be good as it melts at a lower temperature than suet and could make the pudding very greasy. Therefor the best you could do is use shortening which is used in baking and can be made from animal, vegetable or compound manufactured substances. Margarine is an examples. I would suggest replacing the suet with the same weight of shortening and freeze it before breaking it up into small pieces in a food processor. These pieces can then be used in the pudding. Hi, Thank you for your message. A thermal cooking is a way of cooking by using heat retention which in turn means a saving on fuel. A thermal cooker can also be taken anywhere once started and it will continue to cook for up to 8 hours without any power. Although they have been around in the Far East since the 1950’s I have been mainly responsible for introducing them to the UK. Unfortunately as she brought the joint out of the oven she dropped the meat on the floor. Her answer to that was kicking it under the cooker and saying......"Let's all go out to lunch. Yummy recipe! What are sultanas? Not sure I can get them in the United States. Will probably substitute currants or similar. Also, do you have to use suet? Again, a rare commodity in America. Can you use lard instead?

Hi thank you for your comments. Sultanas are dried white grapes but from seedless varieties. They are golden in colour and tend to be plumper, sweeter and juicier than other raisins. Also referred to as Golden Raisins in the US. I do think that you should use suet if possible because anything else will change the texture and things like butter will melt before the pudding sets. I believe you can get In Canada, you can buy bags of frozen Suet in supermarket chains such as Sobey's and Loblaw's. Hope this helps Mr D

Hi Myrtle, thank you for your question. Yes you can use shortening and here is what Nigella says about it: If you can't find suet then we have found that grated vegetable shortening (such as Trex, Crisco or Copha) is a good substitute. To grate the shortening firstly freeze a stick or block of it until firm but not solid (this usually takes about 30 minutes). Grate the shortening on the coarse side of a box grater into a cold bowl or onto a cold plate, returning the fat to the freezer if it becomes too soft. Before using the grated shortening chill it for another 10-15 minutes in the freezer. Hope this helps, All the best Dave

I love the old world tradition of involving family in stirring from East to West representing the wise men's travel to the manger. 13 ingredients representing the 12 apostles and Jesus. The coin for good luck. A little much with the foil coverage. What are the blended spices?

+Sooner boy (Goldfish8) Here is a typical mixed spice mix from BBC good food site 1 Tbs ground allspice 1 Tbs ground cinnamon 1 Tbs ground nutmeg 2 tsp ground mace 1 tsp ground cloves 1 tsp ground coriander 1 tsp ground Ginger You can but mixed spice already mixed though as I did.

Sorry, my english is not good. A question: why your pudding is dark? Muy pudding is light bronw. In the picture what I see online, the english pudding always are dark brown. Maybe, I have to burn the pudding with brandy or rum?

Hi Matilda it is probably the sugar you use. You need to use soft dark brown sugar and you could add some treacle to make it even darker. Hope this helps. Have a good Christmas Mr D

Whoa, hold on a sec. In the vid you very correctly added shredded suet at 4:09, and the finished pudding looks fabulous, but in the vid description you inexplicably list the suet as "vegetable suet". Huh ?! Forgive me, but what the heck is VEGETABLE SUET ?!Real Suet is hard beef fat ... it is THE most non-vegan of all non-vegan foods this side of blood pudding and roasted marrow bones. Why, oh WHY did you put the word "vegetable" in front of it ? 50 lashes with a wet noodle ... extend your wrist please. 🧐 Friendly teasing aside, +1 for an otherwise helpful vid. 😁

Hi, you can use either and the pudding will be fine. The vegetable suet is for any vegetarians who would like to make the pudding. The biggest problem though is suet is very hard to find in many parts of the world and this can be a problem finding a substitute. I have changed the ingredients to include either. Although I've never used it shredded in a dessert (only for barding roasts), the easiest way to find suet here in the US seems to be to visit a butcher and ask for some surplus hard fat from the deckle (fat cap) of a short loin or rib roast. Dry aged is fine, but may have a slightly cheesy flavor (which I like, but some dont). Thanks again, friend.
