OLD FASHION BAJAN MUFFINS

This is an old bajan recipe that has been around for a very long time. Fried muffins can be eaten for breakfast, with lunch or as a snack, There will satisfy any sweet tooth.
Recipe calls for
2 cups of swift flour
3/4 cups of sugar
1 1/2 tbs spoon of baking powder
1 tsp nutmeg
1 tsp cinnamon
1/4 tsp salt
1 tsp vanilla
1 glass water
combine all ingredient together and mix well, add water to a stiff consistency roll with hand, make into balls and flatten, fry in hot oil until brown on both sides.
serve and enjoy.

Morning Tina hun, miss you, but know you back at school. Its Wednesday morning 08.07 in UK lying in bed watching your video . Good to see a breakfast video and good old bajan muffins, I remember my family making muffins real fluffy. I love the Turkey bacon that's all I eat not the regular bacon and of course all the stuff you having with it, would have love to be a part of that Sunday breakfast. Why are you giving away your husbands egg secret. (Gonna try it) Girlfriend your daughter is right, growing up in Barbados as a child was the best for real and grandmothers definitely know how to make food stretch and full yuh belly. And not forgetting playing all those games and kite flying and just having real fun as kids back then. Today too much technology keeping the kids in the house they don't know about having real fun. Hi Angel, Just sat down for the first time all day to respond to your message, you wrote at 8:07 your time which was 3:07 am our time, you are 5 hours ahead of us.I saw your message first thing in the morning but could not respond until now. I know you watch the whole video because of what you wrote so I want to say thank you for watching and staying loyal. I missed a couple days of filming because of a busy schedule, but I will make up for all that. Hi Girl how are you? Yes we had fun growing up without even realizing it. When my husband and I tell our kids stories of all the things we did as kids, there both wish their had grown up in Barbados. There are great memories I will have forever. Thanks for watching.

I remember being a little girl in Trinidad and my father who was Barbadian, used to take us on a Saturday night and buy that same muffin and fried fish from a Bajan woman.It was something I never forgot.

Hello Tina, I love watching you cook. You bring back so many wonderful memories. I feel like we grew up in the same village...LOL Mine was Four SquareValley, St. Philip. Do you remember Goose Berries, Hog Plum, Chilly Plum and eating Sugar Cane (juicy) until your jaws hurt. HaHa. You are making me a better cook and my husband loves it. Yes I remember goose berries, hog plum, chilly plums one of my favorites, I cant ever forget sugar cane those were life savers for us lol yup we suck cane all day in the crop season till our jaw hurt lol. Sybil Taylor Tinarine love your videos and you but your muffin dough was not smooth I used a glass to cut mine out to get a smooth finish. The potato for the cod fish was also rough could been a bit more moist and spread over the fish much neater no offence but you ask for comments iv always give you a thumbs up you are amazing

Hello Sybll, I am not sure what you consider smooth with the old fashion muffins but mind tasted almost like a donut on the inside and a crust on the outside, there came out beautifully. As for the fishcakes when you boil the potatoes, you cook them soft enough that you can mash them creamy. You may not have boil your potatoes long enough. I used 2 cups of flour in that video. but you can add more or less depending on how much liquid you use. Watch the video again to see the texture you'll be looking for. Let me know how there come out for you.

Hi Pauline, I am doing well thank you! My grandmother used to make those muffins, hers was really good, but you know how the older people were, a little of this and a little of that. I was able to remember most of the ingredients she used, I just had to average out the measurements, and I was very happy with the results, there came out tasting delicious. Hi Sonia, I'm sorry must have forgotten to mention the amount but its 2 cups flour I added. Make them as though you were making bakes, only add more baking powder and flour, roll them in your hands, flatten them out. Make sure oil is hot before dropping.

Your grandmother was one of those resourceful ladies I talked about who found quick and clever ways to overcome difficult times. There did a fantastic job, we were to young to understand and appreciate everything they did.🌹

stumbled on this because I felt like making some of these muffins this morning. thanks so much. i remember my aunt making these sometimes in the oven but usually in the butpot (spelling?) with almost no oil.

There is not much to bajan muffins, it's the same as making bakes just add a little more baking powder and flour and roll them. After you give them try let me know how there come out. Its not much to it.

Hi Tina, I grew up on muffins and just last Sunday I tried to make them. I was telling my husband about the muffins my mom made when I was a little girl but she used to put a hole in the middle of them. I asked her how she did them and she told me, " You have to make them stiff!" Unfortunately mine did not come out like my mom's own. I am so happy for this video to show me how to make them better. I will certainly follow you and make them again...but with a hole in the middle.😆 just how my mom made them. Thank God for you. Blessings 🙏

Madonna it is very hard to recreate a lot of those recipes the older people made, I don't remember my grandmother ever showing me how to cook or bake certain foods even though I thought she was one of the best cooks out there. The muffins are made with more baking powder and flour, you need to roll the muffins in your hand and flatten them out before frying in very hot oil. What your mum made with a hole in the middle are probably doughnuts, I plan on making those at a later date.

Huh I have to think about that, rusk is just toasted bread, Is that something you like eating? If you do I can add it to my list of things to do.

@@Tinaraine Maybe I spelled it wrong but it's not toasted bread its done in small rectangles and its hard I think it has in coconut.

@@bajeboi I wasn't sure what it was, so I looked it up, its a bread that's baked sliced into rectangle shape then toasted, of course when you're baking bread you can always add your favorite ingredient, which can be coconut. I love the taste of coconut.

Harriet there's a different between muffins and bakes. Bakes are flat muffins are fluffy almost like a doughnut.

I didn't have those go outside and play days. Our day was work, work and work. My Father had a shop and I was behind the counter from age 7, then there was kitchen garden, chickens that were raised for selling, pigs and sheep. I hated vacation, seems like he planted beans for purpose to keep us busy. Long wide beds that you had to go up and down. So for us it was no going out to play and running in for food.

O Wow, I'm sorry to hear that, It must have been hard for you as a kid hearing all the other kids outside running around playing while you had to stay indoors and work. Today there are child labor laws that restrict the hours children are allow to work, to bad we did not have those laws back then but I'm sure even though you may have hated it, it has made you a much stronger person.
