If you are looking for a traditional sweet pickle recipe, like the kind they used to serve with church sandwiches or at bridal shower luncheons, then look no further! This classic recipe will bring back fond memories of elbowing your way through buffet lines to score those crunchy sweet pickles!
Nine Day Pickle Recipe:
10 lbs. pickling cucumbers (washed & sliced into 1/2 - 1 inch pieces with blossom ends removed).
2 cups pickling salt (not iodized salt).
Boiling water to cover cucumbers.
Brine:
10 cups white vinegar
12 cups granulated sugar (divided).
2 tbsp's pickling spice.
DAY 1-3
~ Layer prepared cucumbers and pickling salt in a large , deep stone crock or a food grade plastic or stainless steel container.
~ Cover with boiling water.
~ Let stand for 3 days.
DAY 4
~ Drain salt water brine.
~ Cover with boiling water.
~ Replace weight.
DAY 5
~ Repeat steps from DAY 4.
DAY 6
~ Drain and rinse cucumbers under cold water.
~ Make brine (combine vinegar, 6 cups of the sugar and pickling spice) and bring to a boil.
~ Pour over drained cucumbers and replace weight. Cover with cheesecloth.
DAY 7
~ Drain cucumbers, reserving brine in a saucepan.
~ Add 3 cups sugar to the brine, bring to a boil.
~ Pour boiling brine over drained cucumbers.
~ Replace weight & cheesecloth.
DAY 8
~ Repeat steps from DAY 7
DAY 9
~ Drain cucumbers, reserving brine in a saucepan, bring to a boil.
~ Pack drained cucumbers into 10 pint jars up to an inch of top rim of the jar.
~ Add boiling brine to within a half inch of rim, remove air bubbles, re-adjust brine level if necessary.
~ Wipe rims with clean cloth, screw on lids finger tight.
~ Process in a hot water bath canner for 10 minutes (15 minutes for quarts).
Makes about 10 pints.
Pickles taste best when allowed to sit for 2-3 weeks.

I’m doing a 9-day pickle for the first time. I’m noticing the cukes are really flimsy (my grandmothers recipe said soak them whole). Is this normal for them to be so very limp?

Hi there....are the cucumbers limp before you started... flimsy after the salt brine or flimsy as the finished product? When I start, the cucumbers aren't limp but they do kind of go flimsy after the boiling water, salt brine step...then the end result is crunchy pickles after all of the remaining steps. Also, are you using smaller pickling cucumbers or slicers to start?

@@alanacawker-therusticwife I think I figured out the problem but still don’t know why. The cukes were fresh from the garden but I put them in a stainless steel container and used Pink Himalayan salt. I found my canning salt and tossed the cukes but for some reason, which I don’t know, the recipe says don’t put in metal container. I’m hoping that was the problem???

@@NCPrepper-zd9ln Good morning! Perhaps you are right as I have many older recipes that also state no metal to store the cucumbers in while making a several step recipe. I'm not sure either, unless the salt and enzymes in cucumbers react to the metal after a few days?? Also, I have read several articles saying that pink Himalayan salt is fine for pickling but read an article from Oregan State University saying that it will affect the quality of your pickles. Something to do with the amount of minerals in the salt. I hope you have better luck with this next batch! Take care and have a great day!

Hi Alana, I love growing fresh vegetables and usually end up giving a lot of them away as I cannot use all of them. I am a 63 year old man that has never attempted any canning on my own but would like to start. I may sound pretty unexperienced because I am. What size crock did you use in this video? Hello great video. How to do you get them crunchy? Lime or Alum is what most people use in making their pickles crunchy. TFS.

Good morning! The pickles turn out crunchy even though there is no alum or lime added to the recipe. I don't know the science behind it, but the 9 day process must have something to do with the crunchiness. I used to make a quick version of this recipe, and they required alum (and they weren't as tasty). I hope that helps! Thank you for watching! 😊
