This is my grandmother's recipe for Old Fashioned cooked fudge that she made as Christmas gifts or birthday gifts. She taught me how to make it many years ago and it was one of the things I looked forward to the most during the Holiday Season. It makes me so happy to share it with you now! Enjoy!!
Single Recipe:
3 Cups Sugar
1/2 Cup Cocoa Powder
1 Cup Evaporated Milk
1/4 Cup Corn Syrup
Pinch of Salt
1/2 Stick Butter
1 Tsp Vanilla
1 Cup Chopped Nuts (i.e. pecans, walnuts)

God Bless You!! Thank you! My mom made this fudge for me as a child and for my children. She passed away in 2010 and I have been searching for this recipe ever since. I’m going to make it this weekend for my children and grandchildren. Thank you for sharing. Peace and love be with you.

I just made 2 batches of this. One with walnuts and one without nuts. Both turned out perfect. I've been looking for an easier to make recipe for this fudge and have found it. Thank you so much for sharing.

August 2020......I have made this over and over last few weeks. I love this NO NEED to cool in sink of water. Creamy delish. In fact I have boiled this on 4 on my knob and made this single batch in 15 minutes.....start to finish. It got to softball stage soooo fast an I kept lightly stirring. Add butter vanilla nuts and immediately off burner stir 3 minutes an pour. Set up beautiful. I was shocked how fast so I remade few days later. Again perfect. Stays shiny as you see as she pours it. So no more boiling for 30 minutes for me. I can make on the fly. Love this new old fashion fudge.

That has to be the absolute prettiest fudge I've ever seen! I know this video is old, but it looks so pretty and glossy. Just the way old fashioned fudge should look. Great job Jeannine!

Thanks for the humidity adjustment. I’m in Louisiana too so I really appreciate that tip. The fudge looks so good. It’s been a very long time since I had real fudge, so I just need a candy thermometer and I’m all set!

I used this fudge recipe for years , it was written on index card for me years ago it was the best warn and tattered couldn't find it one day . It's been a good 20 years since THANK YOU FOR FINDING MY RECIPE , AND GIVING IT TO ME ONCE AGAIN . REAL CANDY FUDGE

My mom made this fudge in Nicaragua, she used unsalted peanuts. She doesn't remember using corn syrup. And we didn't have to wait until Christmas to enjoy it, it was a year round treat😋. This brings back memories💓

My aunt was the one in the family that made the fudge for holidays. She passed and took the recipe with her. I have searched for the recipe,and found some that were close, but they used granulated sugar instead of karoe, and it does make a difference in the taste. It is much better with karoe.This is OLD SCHOOL REAL DEAL. Thank u so much.

So I liked and subsribed because you break some of the traditional rules and it turns out fine. Me on the other hand have tried grandma's recipe and have invented 30 different kinds of new sugary concrete haha! Well done and something for me to try.

It stays glossy. Pretty and yummy. You only one I seen online that cuts center both width and length. Only way to get pieces closely the same. Great job. My Mom made one similar but no Karo syrup. She would beat that fudge for long time. I think the syrup makes big difference. Can't wait to make this.

Going to try this week,looks like my mom's fudge! She passed in 2018 and never had a written recipe so I've been trying to find something similar,shiny and sets up harder instead of dull and soft. Thank you soo much!

my Mama's fudge was similar but she stirred in a jar of marshmallow fluff after removing it from stove. Wonderful childhood memories. Thank you!

My grandmother made this fudge and I would stand by the stove while she was making it. She would test a tiny bit into a cup of water to see if it was ready. I miss her so much and I miss that fudge too. Maybe I will try to make it some day. Thank you for showing this video.

@@JeanninesCraftroom Many many thanks for posting this. People though i was a little off when I kept asking about how to make hard fudge,down the Jersey shore all they know is the creamy type. My mom learned fro her mom,how to cook this magic.We are Irish and Northern Irish,but my maternal grandmother learned it from her second marriage mother in law,who was from Germany. And hard fudge handles being shipped better.I received some several times I the Army. had so many more battle buddy's when I got some. So happy right now,I might even be crushing on you a little.

MissChris5, I agree!! I love the hard fudge. My mom is 89y/o and tries to TELL me how to do it, but I need to watch her, over the yrs it’s been a hit and miss turn out, sometimes we get it and sometimes a flop. My grandma use to make it a lot for a surprise, “Come get the fudge kids” ohhh what a treat! My sister use to make it too, but the Way to do it is always in their head. I give up, Turing to KZbin... so far this looks like the closest to my Grandma’s recipe. We’d always make it in a cast iron skillet though, with the hard ball test. So after watching several channels I think I’m ready to make that perfect batch. The best was when Grandma would put peanut butter in it. Yummy yummy. She would also do marshmallows, walnuts and just heard my Mom say that Grandma would put raisins in it so it might be a little healthier, lol lol. Feb 2020....girl I made this today and it worked just like you show. I did not stress over sugar crystals on sides. Did not clean sides, or butter sides. My gas stove was on number 3 dial. I started mixing at 10:55 and was completed an pored in pan at 11:30. Wow I was amazed. Started beating right on stove about 5 minutes. Slightly thickened some but still runny an I poured out. So scared it was not ready but it’s fine. Can’t wait to eat it........Texas thanks u. Hope this is helpful.

This is the same fudge my mom and grandmother made. It is absolutely delicious! Way better than the marshmallow kind. Mom also added a half cup (for your single batch recipe) of peanut butter after the butter melted in. Yummy!

I guess my mom made smaller batches since she would pour it out on a lightly buttered plate to cool. I sure miss her and the fudge she would make at Christmas.

Madison Freeman you do have to keep stirring it until the sugar melts completely and the mixture starts bubbling. Then only occassionally after that. It sounds like you have unresolved sugar sticking to the bottom of the pot or your pot us not a heavy enough aluminum or it's cooking to a higher heat than necessary. Any one of these can cause the fudge to burn. Light weight pots do not conduct heat the same way heavier ones do. Working in the right pot really helps.

Thank you, this is the recipe my mom & I made,. I couldn't even find it on Hershey's web site. Theirs wasn't showing the Karo & I know that goes in it. We never used a candy thermometer, just kept checking for soft ball. Thank you & Merry Christmas

The amount of work it takes to beat the fudge is too much. It is the reason I stopped making fudge.

My grandmother made fudge at every holiday. She was going to teach me how to make it, but never did due to us living in different cities. This was a very easy to understand video. We will see how mine turns out once it is cooled.

Rose Briar Yes, I've had this happen as well. You didn't get it hit enough. When this happens you can put it back in the pot and heat it back up. Sometimes you have to heat it a little past the soft ball stage if you're having a humid or warm day. I've had to out many batches back in the pot to reheat it. Just add a little milk to help the fudge melt again. Good luck!!

(i used your recipe and watched your video 5 times) lol here is my story. it was christmas eve night 2020, i had everything measured and ready to go. then i spilt the only can of milk i had, so i added whole milk and 1 cup of sour cream. then i forgot to put in coco after i dipped it out a couple , (yes i was having one of those lampoons christmas moments lol ) anyway i put the boiler back on the stove added the coco . it was the best fudge , everyone could not stop eating it. anyway they got up set because the 4 no coco ones turn out to be the best pralines and they kept asking where did i hide the rest of the pralines. i said in the fudge. lol. My grandmother never used corn syrup in her boiled sugar fudge. These types of fudge for me is the best in the world because I grew up with a grandmother making it. My mother even made a pan one night and it set so hard that we would chipping it off in the kitchen eating it and then laughing. I wouldn't be quite so rude or angry sounding about marshmallow fudge it just isn't my thing.:-)

Thank you very much! I lost my Mom's recipe for this and have looked everywhere for a replacement, the only difference is she would add peanut butter while cooling down! My kids and I loved her fudge and we are trying it today! Thanks again!

There's two things I'd like to try when making fudge and adding peanut butter is one and adding caramel is the other. Sounds delicious!

I made your fudge, and it's DELICIOUS. :o) It reminds me VERY MUCH of my mom's. (Hers didn't have the Karo.) I couldn't believe it actually turned out - ha! I'll be taking most of it to church Sunday, but in the meantime ... I'm eating a few pieces, myself. :o) Thanks again, Annette

My mom who passed away a few yrs ago used to make fudge from a recipe book from the 50's. It was called 5 minute fudge for the girls. I remember it had Hershey's cocoa, evaporated milk and 16 marshmallows, and sugar of course. But it didn't have Karo that I recall. Anyway I just LOVED her version of fudge and it always set up. It was slick as glass and had a crunchy sugary texture (because she scraped the sides of the bowl as she stirred) and it was slick as glass on the top. It shined like it was an ice skating rink. That's the fudge I love the best. But I will try it your way without the Karo or the marshmallows and see if it sets up. I've made it at least 4 different times and it never did set up like hers did. After she put in the marshmallows, it almost set up too quickly!

sunshinegirl1967 It sounds to me like the fudge your mom made was more like "fantasy fudge". It's pretty easy to make and almost always sets up properly. You might try searching for that recipe also. Good luck!!

Thanks! Yes it was similar to Fantasy Fudge which called for the liquid marshmallow cream in a jar. I'm fixing to try a very small batch of your recipie either tonight or tomorrow. I can't wait!

A lot of old fashioned fudge recipes have the last step as beating or stirring the fudge till it goes from glossy to matte. This is where I have trouble. I am glad yours doesn’t have this step. Trying this tomorrow. Wish me luck.

This almost sounds like what my dad used to make...he called it candy. Only he poured it on a buttered plate, very thin layer and sometimes set it outside to cool (in winter that is). I can't remember if he sliced it or broke it up into pieces. It was so good! He passed away before I could get the recipe. :(

My mother used this recipe many years ago and I haven't used it in a long time. Your the first video I looked up and it's what she used. Only defence was she used walnuts and coconut. Plus she used cold water to judge when the fudgecwas done lol guess she couldn't aford the thermometer.

*This hard fudge is the best! But, using a 1/2 cup of Hershey cocoa tastes great, too. Saves a little money!*

I haven't had home made fudge in years that looks amazing I like almonds or walnuts, but I would have to make it with glucose syrup and no vanilla.

Hi Jeanine, I am so excited to have this recipe. I made it at Christmastime and it was wonderful. I'm wondering how I might turn this into a chocolate peanut butter version then also a rocky road version. Two of our family favorites. Thanks so much for your recipe!!

I would just add the peanut butter or other ingredients after you take the fudge off of the stove and before you pour it in the pan. Another option would be to put your Rocky road toppings in the bottom of the pan and gently pour your fudge over it. I tried a salted caramel version this past Christmas. I melted caramels and a little milk in the microwave and swirled it on top if my hot fudge that I had poured in the pan. Then I sprinkled a little sea salt on top. I really like your Rocky road idea. Let me know how it turns out. :)
