I just found you while searching for a true southern chow chow recipe like my Louisiana granny and Texas grandmother used to make! (I’m a Texas girl living in a Florida world😁) Now I’m binge watching you making peach jelly, plum jelly and everything else! Hey Chef Jeffery, Hope this message finds you well!! Talking to my moma today about cabbage, and she told me that she wanted to make her some Chow chow. Well I heard about it in your channel years ago, but I never heard anyone in my family ever mention it.. Today I introduced her to your channel by sharing your receipe with her.. My dad ate chow chow every day. On greens, chicken, chitlins, you name it. I never learned to can and I was afraid of it. Watching your video I have more confidence. I am going to make my own instead of getting chow chow from others, I've never purchased it from a store. I believe I can do it. Thank you, Chef Jeffrey. You are truly a treasure. I'm here in Arkansas looking from a good recipe for my Dad. We call it Cha Cha too! My grandmother used to make it, she passed before I was old enough to start cooking, but I remember her Cha Cha to this day! I am going to try this recipe for my Dad.

When rinsing the salt soak off the vegetables make sure to squeeze as much liquid as you can out, you don't want to dilute the brine which has to be at least 50% vinegar that is at least 5% acid. Some store brand vinegars are considered 'table vinegar' and are 3-4%. That's not enough acid to bring non acid vegetables up to the proper pH to kill botulism in a water bath. Botulism spores can easily survive boiling water temperatures, you need the acid to safely water bath.

Oh my goodness!!! I’ve not had any ChowChow in over 25 years! Can’t find it anywhere. Most people have no idea what I’m even talking about! My and my two best friends parents were all from poor white families,,, tells me that we all ate and loved soul food. And yeah, they had to grow it before they could can it. Best jar of yummy goodness in the South and I’ll eat it with anything!

But all I got was a crap load of ingredients I never saw either my aunt who raised me nor the woman I spent 35 years with! We had an agreement she cooked raised the kids and I worked! Great arrangement she ruled the nest! What she said was law in the house! She’s in heaven and I’m stuck down here! But I’ll be damned if I starve! She knew my weakness food…..😉👌🏾 and I lacked for neither! I just want something easy and simple and without a degree! You my good man have ended my search! YOU ROCK!!!

I have asked so many people here in Philly if they know how to make ChaCha with no luck. I’ve wasted so much money ordering it online and buying ChaCha from Cracker Barrel and various farmers markets

@@gwendolynpeay1095 YES= My Daddy loved his Lil Annie's ChaCha (pronounced like PaPa). She was my Great Aunt. His mom died when he was 7. So, he was everybody's baby😍. Even the sound of ChaCha releases endorphins in my head. It brought my Daddy SOO much joy. Her Banana puddin, too. Both are gone on to glory now. I was telling Bae ( Geechie from SC) about Cha Cha & he had no clue. So that's how I ended up here. I forgot how special this condiment was to me & my family. Somehow, I forgot to introduce it to my 21 yr old son. THANK YOU THANK YOU THANNNKK YOU for taking the time to make this video. I MUST pass it on. We , as a people, lost something deep within. Sounds comical, but I think ChaCha does to us what spinach does to POPEYE! I LUV US FRFR

I was 22 years old living in Knoxville Tennessee and was pretty poor not much food but boy did I learn how to cook those southern ladies were great in teaching me no internet back then so I definitely learned from others. One lady gave me a jar of chow chow I asked her what it was and what was in it she kinda laughed and said everything! She then told me her mamma called it the end of the garden chow chow bc they used everything that was left in garden at the end of the growing season 🥰 I didn’t have anything to eat it with and it was so good so I made some biscuits and ate the whole jar on biscuits it was great!! Well I bought some store bought chow chow recently and it just didn’t compare so I made my own this year! It turned out great and I’m very proud of it!! Boy it’s a lot of work but I did chop everything pretty fine . I also canned some sauerkraut and peaches for the first time they turned out great too! I’m thinking Christmas presents of home canned goodies this year!!

I love the way you introduced the safety of the jars while using wood or plastic in the hot jars with the mixer of veggie ingredients are in them...Thank you for sharing I remember my Grandma jaring all kinds of fruits, different varieties of vegetables also she did do Chow -chow. Oh my I loved it on my collard greens the hot and lite taste of sweet did it for me. I just Jared some beets after making some pickle eggs with some beets in them using pure sugar Cane as my sweetener. Now I wanna try it with the Chow-chow. Thanks for the tearful (that is,the happy) memories of days long past, when I used to watch in awe as my grandpa used to make his chow chow. My gpa left this world back in 1959, when I was only 8 year old. I can not reassure the my loving grandpa, but I can ( now with the help you’ve given ), at least bring back to life such sweet loving memories anew.

I make chow chow and send some to my brother and sisters. They don't like to can but they love the product. It's a remembrance of when we grew up and "HAD" to can. Canning is a lost art. I'm so glad I love to can. When I take out a jar in the middle of winder, I just love eating and remembering the day I canned it. Be Blessed Mister. #helpotherswithpurposeOSSF

I haven't had any good chow chow in years.my grandma would make it all the time.I found one about 8yrs ago been there canned for about 5yrs opened up and it was still Great!!! Now with my back problems I can't try it.Yours look good.

I love this, this Gentleman is pure heart. I made homemade “Rummage Salad” today, folks call it cow-chow also, put it on peas, beans or a slice of roast, mercy. I can recall my Great Grandfather spooning it on fresh hot cornbread. I love how he didn’t drain the salad after he salted it, old school to the core. I came across your channel several months ago. I have never eaten chow chow before. I canned it and let it sit for a couple of months. Man , you are sooo wrong for this one. my dad used to make something similar he called "sauerkraut" that he learned when he was in the army. they pickled the cabbage and often it was the only way to keep vegetables was canning the crops that came. he also did a corn relish, mustard relish with pickles was my favorite. there was no grocery stores to run out to pick up stuff. canning was the only way.

Every end of summer my Mother, her sisters and her best friend Aunt Baby Jean, they would spend 1 to 2 days making chow chow and stringing peppers to dry. My Pops would make Head Chesse in the fall, 2 to 3 temperatures and that would be a full day of preparing, all GREAT MEMORIES!!! Thank You so much, you're much more than a Chef 😀

I've been looking a chow chow recipe like my precious Mama use to make, for 2 days on KZbin. Yours is the closest one. Yours looks delicious. I love yours because you chop up all your ingredients versus doing them in a food processor like all the other recipes that I found. I'm so glad that I ran across you. I haven't thought of Chow Chow in so long. My daddy used to make it in the Fall, out of what ever precious little stragglers there were left in the garden. My kitchen is much too small to can now. But I will be moving in a few months where I will have more room. Maybe my first canning project will be your chow chow! Thank you

To elizabeth shaw’s question re mainly green tomato chow chow: i had a recipe ( now lost) about 30 yrs ago for green tomato relish. It called for grinding up the tomatoes, and onions and some cucumbers and some red bell pepper for color , plus some fresh whole corn kernels cut off the cob…the brine was the same as Chef Jeffs. and I put mustard seed in also..It tasted just like “bread snd butter” pickles..I would proceed today to use the same method of sprinking salt over the batch to draw off water and processing as our Chef here. Mainly I just used amounts of what was on hand as I had a lot of green tomatoes , and cucumbers. I used my grandmas old hand crank food grinder and it made a very small dice..saved a lot of work. My mother-in-law, great country cook, taught me when making jam, jelly etc to fill boiled jars to 1/4 inch from top, seal with boiled lids, then set jars upside down on a towel on the counter away from a draft, then cover the batch of jars with a light weight flour sack type towel snd leave overnight. With pickles , hot pack in sterilized jars, fill with boiling brine and seal finger tight..not cranked down hard..so air can escape as they cool, thst creates a vacuum in jars that crestes the seal. Cover with a light towel and do not disturb overnight..Only use this method with jams and pickling..This works great, only a very few seal failures., in which case just store in refrigerator and use them asap..

Chef Jeff thank you so much for posting this recipe. My grandma used to make this for all the old people in the neighborhood in which we used to live in and my only duty was to cut up all of the things that she needed to put into the chow chow. I would do that and then leave. I didn't know the cooking process nor did I ever taste it. This was over 40 years ago. I thank you for letting me know what the cooking process was.

I just made some, but I didn't use pickling salt. I used pink sea salt, candy I also added tumeric. It came out good.

I love chow chow. Thanks for sharing. I bought a water bath canner and Ball's canning book last year. I think I'll combine your recipe with theirs, plus a twist ingredient of my own, for my 1st attempt of water bath canning anything. You make it look really easy. If it comes out right, I'll send you some pics. Thanks again!

My niece just asked me about cha cha, did I know how to make it, I watched my mother make it years ago thinking I was helping her. She knew she would not be here forever and I Loved it so much she wanted me to be able to make it. I enjoyed watching you make it, you sterilized your gars and everything. Your recipe is slightly different from hers but it looks delicious to me. I have never met a gar of cha cha that I didn't like😊. I look forward to experimenting and re creating her recipe. I don't remember apple cider vinegar but I know I want some in mine. Thank you for sharing your family recipe with all of us.

Thanks for sharing this with all of my late mama used to make this for stews and soups and put it in lots of stuff. I watch her can a lot of of this in jars.. i used to laughed at the name of it when i first heard her say it. It sound like chow child chow😂🤣 but it was delicious in food.😊😋👍🏾✌🏽💕

I love Chow Chow. You'd think being raised in the South (Texas) and the family canned things like peaches, pears, figs, and even watermelon rind we'd have Chow Chow as well. I really don't recall us ever having it. I wasn't exposed to it until I moved up North. You had me a but nervous for a minute when you put the veggies in the jars while still pretty warm. I surely can remember breaking a glass container, or two after I stuck something in them when it was hot. Thanks, again Chef Jeffrey. 👌🏽😊

Thank you so much for taking the time to show me how to can and make chow chow. You were very informative.. I am trying my hand at it today.I love it and it is hard to find here in Cleveland OH. A friends Mom use to make it gave me a jar. When I finished the jar she had passed. So the hunt was on to find chow chow. No grocery store sells it. I finally found some at Cracker Barrel. Now they don't carry it any more! LOL So since I love it so much I have to learn to make it myself. You made it really easy. All I had was an recipe. This was fun!
