My friend who lived in Europe prior to WW2 told me how they would have three large crocks in the attic near the stove pipe. One crock with white cabbage another with red then one filled with pickles. Ropes of onions, garlic hung in the rafters. Salt was bought in a 50pd bag so was flour, sugar was smaller. They raised rabbits for meat and had some chickens for eggs.

My grandmother told me about the terrible Louisiana drought in the 1970s that killed the sugar cane, driving up the cost of sugar and sugar containing products, and how once the prices went up, they never came back down. I learned a lot from that story.

@@peter5.056 That’s been going on since the beginning of time. They start by raising the prices when people start complaining they reduced the size of the product. Either way they get you. It’s nothing but greed. No respect for the consumer or care if you starve to death. Candy bars were huge and cost a nickel. Ice cream came in half gallon containers. I’ve watched the containers shrink until they’re beginning to look more like one serving size.

I love this. My friends aren’t into pantry preparedness. I tell my friends I’m not a prepper for the future, my emergency is today. I can’t afford healthy food today unless I make it all myself from scratch. I can’t afford it from scratch even unless I buy it in bulk on sale and store it until the next big sale, or the next summer my garden is producing. And yes I won’t be able to afford it tomorrow either so I make extra, can extra, freeze extra. I’m living my budget emergency so canning, storing, stocking up, gardening is a lifestyle change that keeps my family eating a healthy diet today. One thing I must have, and do have, is vanilla extract made from fresh vanilla beans and the least expensive vodka I can find. It's far better than anything you can get in a store, and I can make a gallon of extraordinary vanilla extract for about $160, trying to get the beans when vanilla prices are low. I simply chop the vanilla beans and toss them into vodka at a rate of 16 ounces vanilla beans per gallon of extract. I cannot live without that. It lasts literally forever, as long as it's stored in sealed glassware (I just use the glass vodka bottles, after capping I dip each bottle deeply into paraffin to seal it 100%. I at this point, I have about 10 gallons of it, lol. There's so many great varieties of vanilla, you've been warned it's addictive!

Follow the process, trust the process. I don't have a cellar, just make some space in an area you don't use. Time to declutter and make your food storage a priority. You can do this!

I absolutely agree with Leisa! You can start with basic ingredients, like ugly chicken, veggies, or look for some meal in a jar recipes. My mom is on her own, and I canned up lots of 8oz (half pint) jars for her that give her an advantage to cooking for herself. Most of them, she just needs some noodles or rice or potatoes to go with them, empty the jar, heat it up and serve next to the starch. She loves it. Also gave her an assorted bunch of 4oz jars of jellies, so she doesn't have so much to go through at a time. She has a farm stand not far from her house that she visits and gets her fresh produce, you might be able to find a farmer's market near you to get some great produce for even better prices. No matter what, a farmer's market will trump any veg you can buy at the store in flavor and variety. At the end of the days for them, many are looking to sell what they have brought with them and give discounts if the right person comes along looking for those things, so get to know some of your local farmers/gardeners. Keep an eye out for good meat sales, most everything can be canned in your pressure canner, and then keep a small supply of wrapped portions for yourself in the freezer, for the those nights you want a hamburger, or a fried up pork chop, or some baked chicken legs. You have opened a door for yourself by creating the ability to can your food to add to your pantry, enjoy the process! :) Good luck to you!

If you bought a cooker instead of canner you can FREEZE individual meals NOT CAN IN A JAR. Dollar tree will hav containers cheap for freezing. Make sure which one you hav. Canner you use jars ; cooker you freeze meals

This weekend is a long weekend in the UK so its dehydrating zucchini, pickled shallots, freezing carrots, freezing/ drying peas. Next weekend canning mushrooms, dehydrating mushrooms, ground beef and beef stew. The first week in September is back to school in England so also prepping for that.

We started cooking our own oatmeal from scratch. I love to make homemade jam which beautifully flavors plain oatmeal. And if you want a fruit & cream style of oatmeal, just add a small splash of heavy cream.

I'm over here listening to you on repeat because I'm making a pie crust with my lard. I burst out laughing, not sure why, something you said was funny apparently. Harvested my 6th time rhubarb today and I have a ton of honey crisp apples from our semi dwarf we planted 7 years ago, and there's still a ton more! Made 2 apple pies the other day, they're gone, they were gone in just shy of 3 days. So yeah, apple rhubarb pie in about 20 minutes. My crusts are freaking AMAZING! Yeah, I had to sit for a minute to type this, back to work woman!

Storing lots of filtered water in my empty quart canning jars. Only two of us now so I don’t use many quarts. Also, made my own DIY filter system from a you tube video with a ceramic filter, two stacking stainless steel pots and a spout. I have well water and it tastes so much better filtered.

We have a store here that once or twice a month they have “buy one get one for a penny “. A good bit of the time they have dry beans and 1 pound bags of rice on that sale. That is where I got my rice and bean stock. Lots of other things on penny sale also. Sometimes meat. It’s great.

Jams can also be used as a topping for plain yogurt, cheesecake, or ice cream, pastry fillings, or turned into a BBQ sauce or for basting meat. My favorite is jalapeno peach jam. It's the bomb!

Hey, Leisa! Such great advice!. My dehydrator has been running consistently for a c couple of days. My deck garden didn't do as well as I had hoped. The plants were gorgeous, but fruit was scarce. I got away from this but here’s what I’ve done- 44 jars of sauce, now canning beets, peppers, potatoes, carrots, pickled garlic and onions. I missed the pickles but I have 10 jars from last year. I’m making my own pastas, banana and zucchini breads. Stocking it to the rafters this year!

@@SuttonsDazeI appreciated the “cornmeal” tip. On my next shopping trip, it’s all about the ingredients, dry goods, baking supplies and oils/vinegars. My project will be canning the beef. Will a water bath suffice or does it need a pressure cooker? I also mason jar soups (without pasta or rice) as I add that at the time of serving, chili, salsa and jelly peppers.

I do 1 big haul every month at Wally World for our monthly eats, and to add to the pantry. I didn't do it this past month. I only gave them about $20 of my money. I had enough of what I needed in my kitchen pantry and freezer without having to touch the long-term one. I did that to test myself, and I didn't want to give Wally World a chunk of my money for less food AGAIN. A little rebellion there. If I hear one more politician try to convince me that inflation is only up by about 3%, I may spit! As always, Leisa, good video!

Herbs, thanks for reminding me, have to start drying mine, so much better than store bought, it’s the only thing that did good in my garden this year. I only render the leaf fat into lard for baking, make enough and freeze for a year.

I’ve canned tomatoes and I’m 76 my daughter and I are both disabled. Took 2 days to get 2 5pound buckets and a half bucket day 1 we prep 2 we had two canners going at one time twice. Lucky my 1 grandson help us but took all day. We have grapes to make jelly. To get them ready we will get them and put them in the freezer and do them in the fall. When it’s a little cooler.

Stone ground cornmeal (King Arthur and others make this) is amazing for southern cornbread, it has varied coarseness of grind, some fine and some less fine, so the resulting texture is very nice.

Love your content. I make my own baking powder- baking soda and cream of tartar. Which brings us to the topic of recipes and food related topics, DIY condiments, etc. I have many recipes saved online. I’m older so still depend on writing recipes and lists on paper as backups. I think spreadsheets, the cloud and flash drives are wonderful as long as they work. Two is one, one is none.

Jams and jellies make GREAT pork or chicken marinades! We mix orange marmalade with wasabi mustdard for an outstanding marinade and sauce with pork chops or chicken breasts. Mint jalapeño jelly is amazing in a beef or pork stew. Some jellies mixed in your white cheese sauces are so rich.

You can make your asian fish sauces with canned anchovies, sardines, clams etc… you need that for those dark sweet sauces you dip or pour over sushi or other asian dishes.

@@firehorsewoman414 I do, I add some salt and pepper. I keep it fairly simple. For 2lbs of pork loin I use 1 12oz jar of marmalade, 1 tsp wasabi dijon mustard - 1/2 tsp kosher salt & 3.4 tsp fresh ground pepper.

Go to a horse stable get some older manure and mix in with your garden soil. The Brussel sprouts will grow huge. My always have.

@@Stogi-my neighbors have horses, I'll ask. This is high desert, and most losses are from 7% humidity, things lose more water than their roots take up. All my raisedbeds are heavily composted and are hugelkultur beds. Most are full of native edibles instead of European vegetables. I eat well, but not usually European. Oddly enough, they translate best to Asian dishes. I still buy a few European vegetables, less every year as I change my diet. Seems very healthy, I am on no meds at 70.

@@RebeccaTreeseed If the manure is fresh it will burn the plants. You can still use it by poring water over the manure and use the water to water the plants. Or put some fresh around the plants without touching the plants. Rain or watering will leach the nutrients to the roots. Good luck I hope you have a bountiful harvest 🤞

We had a water main break in town at 430 am. Most of the town still doesn't have water at 740pm. It's times like this we need to pay attention to how people react with anxiety and panic from everyone in town. They ask every 5 minutes for updates on the water. We will have to have a boil water advisory after it is finally fixed. If people act like this for one day without water, what happens after a few days or a week..

I make powdered sugar and brown sugar, only use them on occasion. And oatmeal molasses bread! I have iodized salt, low iodine thins hair. Also canning and pickling salt.

Crackers, cheese, turkey pepperoni and a dab of mustard can make a meal!! Picked up 2 boxes of them today. lol! It’s not the cheapest meal ever (but I can only eat Mac and cheese with hot dogs so much) but it’s a tasty treat. In a pinch I have been known to put a pile of shredded cheese on the plate and once the mustard is on the cracker, dip in the shreds so they stick. Top with pepperoni to hold them on while you eat.

I take pepperoni and chop it, drop in tomato soup, add cheese to your bowl. Can't eat gluten so this is my pizza, lol

Canning has been a great help in making organic foods affordable for us. My Dad is diabetic, and we know that his blood sugar stays more stable if he has a good helping of beans every day. Well, organic dry beans in my neighborhood run $8-12 per pound! Those are meat prices! So we order organic beans in bulk from Azure Standard, and I have between 100-200 pint jars full of a variety of beans at any given time (variety is important - we get really tired of beans!). Also, we have a month's worth of drinking water canned up in large jars for us and our pets. In California that is no small thing. We are getting more and more into canned meats, and we have about 60 quarts of various bean soups canned up. Jams and pickles not so much, but a few favorites are always on the shelf. Tomato products, yes, some basic stuff. Still haven't found a canned recipe for salsa that we love, but maybe that's coming. Best plants for the garden are tomatoes, peppers, herbs, cucumbers, and squashes of all kinds. Oh, and BEANS!!! My favorite beans to grow are Gigante beans (huge white Greek runner beans), Borlotti pole beans, and Cherokee Purple beans.

Simple salsa for heirloom tomatoes is tomato, a little roasted peeled deseeded chile, garlic, salt. I think people try to put too much other stuff and can drown out the heirloom flavor and freshness. But I don't know what you like, so just a thought.

Canned ham is good too. You can get a small one for $3.49 and get 4 meals out if it. And they are already cooked. I’m going to add dried fruits - thanks for mentioning those- I had forgot them. I always have lemon Gatorade for electrolytes. Thanks fir doing the videos 😊

my stored water has come in handy when water in my apartment nuilding gets shut off for repairs. I have "liberated" glass jars that are not for canning from my mosque when they get emptied. . I even found canned lamb/mutton. sometimes people bring food to the mosque thinking it will get used there when it is either not the correct types of items or are of such small quantities that it'snot worth storing expecially when we do not have frequen community meals outside of Ramadan or the very simple lunch served after the Friday prayer (this is rice with seasoned ground beef and mixed veggies mixed in). the dry foods I rescue get repackaged for long term storage or if it is such a smallamount I'll just cook it up for a meal or 2

Your "liberated" jar comment gave me quite the chuckle. I "confiscate" all my daughters jars...lol. And the neighbor "donates" his to me. Just picked up some bottles from him today. Great to make vanilla in. I do like you in that with misc noodles, I throw them together and make a meal out of them.

I just canned a load of ugly chicken today. I can lots of meat and poultry. I dehydrated 12 pounds of frozen corn this week to vacuum seal. In a pinch it can be ground for cornmeal. I can, dehydrate, freeze, and vacuum seal stuff like crazy, but I still stock up on commercially canned basics like green beans and tuna. I’m already prepped for holiday meals, including French fried onions and cranberry sauce 😊

I buy coffee from Aldis. It's not bad and hasn't gone up much. The special coffees went up about a buck or so. I store it in the freezer until I need it, and it comes up into the freezer after I open it. That works well for me.

Without actually " making" a whole bag of brown sugar, i was reading for light brown sugar use 1 cup white sugar and 1 Tablespoon molasses; for dark brown use 2 Tablespoons.

If you can find the pop up foil and parchment paper at the dollar tree those are super worth the 1.25! It’s so convenient to have pan size parchment and foil for my little pans. I don’t use the foil on my grill but for light use to cover chicken in the oven that doesn’t need heavy Foil!
