After all the holidays, I am happy to return to my daily routine. Winter is a time of peace and time to enjoy doing handicrafts and realizing my projects.
Today I will cook as our ancestors did, namely in a clay pot.
Dishes in clay pots are a combination of healthy, tasty and very easy to prepare food. It is an old tradition to simmer soups, porridges in a cauldron or clay pot. Even for our grandmothers, the ability to work with a poker and a cast iron pot was common. In some villages, both ovens and the habit of cooking in them have survived. In modern urban or country conditions, dishes in pots are cooked in ovens. But the dishes do not become less flavorful - the principle of evenly distributing heat throughout the entire space of the dish helps to preserve the vitamins of the vegetables and cereals. Therefore, food in clay and ceramic dishes is especially tasty. Since the products simmer in their own juice, when cooking dishes in pots, you do not need to add fat or oil - the food becomes partly dietary.
Recipe for fluffy pancakes.
250 ml. kefir or yogurt
1 egg
3 tbsp. sugar
1/2 tsp. salt
230 g flour
1 tsp. baking powder or 1/2 tsp. baking soda.
Egg + sugar + salt, mix everything thoroughly. Add kefir at room temperature, mix everything. Pour in all the flour. The dough turns out quite thick..
The secret of fluffy pancakes is that you need to add the baking powder at the very end, mix thoroughly and leave for 10 minutes. After this, do not mix the dough anymore!!!
Heat the oil or any fat for frying, carefully put the dough with a tablespoon and fry on medium or low heat on both sides until done.
Such pancakes remain fluffy and do not fall.
Serve with sour cream, jam, fruit.
