I'm about to fight her on Portable, but I have a really strong Persona for my level, Nekomata, and it knows Bufu, Dia, Cleave, Agi, Provoke, and Re Patra. It's level 7, and I'm level 8. I've also beaten 10 floors on Tartarus. I believe I am ready for this.

I usually don't attack the Summons. I just attacked the Priestess at first and just let Junpei and Yukari attack the rest. It was over in like two minutes.

Man, you had bad luck in this fight. When I fought Priestess, she only used Summon once. My party members killed both Muttering Tiaras (while I focused on hitting Priestess) and she never replaced them.
