Do drivers in the world championship use new tyres for every session?! How much does it cost to race at this level, would love to go national or international when I'm a bit older :D

Depending on the championship you might get 2 sets, 10 tires or something similar, for the entire duration of the weekend. Usually you start with the first set on qualifying and try to keep the other set to have fresh tires on the final race. Cost could be anywhere from €5000-€15000, maybe more, depending on the team, mechanic, choices of engine tuner, damages, costs of flights/hotels and so on...
