WOW!! We made these tonight and they were wonderful! [It's interesting having all these ingredients on hand because of so many SauceStache recipes.] Love the 'Chick-Cheeze', it's EASY and works well enough in a standard blender on high. My fav is the Horsey Sauce, in which I also used the Seminole brand horseradish - Publix. And I never thought to simmer those Tofurky slices in veg broth and Marmite (head smack moment) - which by the way, makes an excellent 'faux-ju' sauce when reduced to dip leftover seitan in - so save that liquid! THANKS!!

If you know anyone in Australia, ask them to grab you a jar of Promite. It's a smaller brand of mite but Marmite and Vegemite are pretty similar, Promite is quite different to them. It's faintly sweeter, and in my opinion, meatier. It's closer to Bovril beef extract, but still just vege and yeast extract.

For better cheddar flavor, use annatto/achiote instead of tumeric. They add it to real cheddar to make the color uniform but it does impart a little flavor.

As someone who's never liked nutritional yeast. There's no way that plus lemon juice, sauerkraut, and garlic turns chickpeas into a flavor that could be desribed as cheddar. Granted, Arby's cheddar isn't really very cheddary either, being more like velvita. It does appear that sauerkraut has some lactic acid, so I see where you're coming from there. But that's only going to be the case for the fermented product, and a lot of people buy the cheaper stuff that's just brined in vinegar. I bet sourdough is closer in flavor. I wonder if it's possible to make a roux from sourdough and use that as the base of the chees-ish sauce.

Farm fresh arugula is one of the best pre workouts I've ever had, and I used to use supplements. Uncoated oranges with the peels on are amazing also. Consider fresh squeezed lemon juice too, pepsin is an enzyme that thrives at the same ph.

IT thickens up a bit.. but adding a bit more broth or water and a quick stir and it's fine!! You can totally heat it in a pot or microwave.. but just be carful not to over heat as it will really thicken

This is why I hate when recipes say “a pinch”. That pinch of salt for the horsey sauce looked like almost a tablespoon where the pinch of white pepper was more what I think of as a pinch. But yumm yumm. Looking forward to trying this.

No, but it does thicken up a little bit. It stays fairly soft. You could add agar agar or carrageenan to firm it up

Miso paste like @LLJerseyGirl suggested would be great!! thats a good tip!! You can also use a little glutamate powder or MSG. ( just a little) even a pinch of tomato paste to bring up the savoriness of it. I would start by adding all the ingredients and blending smooth, then slowly start adding in Miso or any other glutamate like tomatoes or mushrooms to see what you think of the flavor. Nooch just really has a nice cheesy taste, so it's hard to replicate, but in the end a good cheesy like sauce doesnt have to be spot on like cheese. it'll still get you a good flavor
