You have no idea how many videos and text articles I've gone through to get this piece of information, and they all meticulously dodge that issue and rather focus on snapping to an edge or the right click dropdown etc. Like slalom avoidance. yeah exactly, in all other 3d app, it's the standard, adjust pivot in max, modify pivot in maya. i don't know why the blender just beating around the bush about this

There are ways to speed up the process of changing Pivot's location for free. Activate the Addon built into the Blender called 3D Viewport Pie Menus > Edit Mode > Mark Verts, Edge or Face > Press Ctrl+Alt+X and select "Origin To Selection" > DONE! Besides, there is also an option to pin the pivot immediately to the bottom of the mesh. Much faster. If someone does not like Pie menu, another interesting free addon is "Origin at selected". In the same way, in Edit mode, select the place where you want to place your pivot, press Shift+Ctrl+C and you're DONE! :) Nice video. It's worth knowing the basics of how Blender works, but it's not worth tormenting yourself.

Coming from Max i find it difficult working on an object that is at an angle. In Max you can add a grid helper place it on a surface you want and make it active and your xyz will all be dependent on that plane. Is there a way in Blender to do that?

Worth noting that the shortcut to toggle "Origins Only" is Ctrl dot (then select the object to select the origin) faster than going to the menu. Another way: Assign a shortcut to Object > Set origin > Origin to 3d cursor - I have mine set to Ctrl , [that's Ctrl comma]. To assign a shortcut right click the menu item Shift - right click - drag > moves the 3d cursor, snap where you want (you can use ctrl at the same time to toggle snapping) Ctrl , Really fast once you get used to it and shift right click drag is useful for placing new objects or just getting the 3d cursor out of the way

Justin, the quick way is to select "Transform Origins" is to press Control plus the (.) period sign on the main keyboard. (Not the period on the number pad) Pressing it again deselcts it. Hope this helps.
