The secret to eating chicken feet is actually sucking the flesh off the bones. It should be cooked so tender that u can just slurp the flesh off.

Not only do you have a great palate as I said before but you have a rare thoughtful mindset with unfamiliar food (like chicken feet, which can be surprisingly tasty when braised well)! Maybe I’m unfairly stereotyping but it’s quite surprising for an Italian (?) - a country of well-known food nationalists. 😂

I would say it is slightly offbeat and slightly different from the usual “standard” Cantonese but it’s not inauthentic. Like drunken chicken? That’s an authentic dish but I’ve never had that at a dim sum place. 😅 Century egg yes but the combination with tofu is also not stereotypical for a dim sum place (but it is not wholly unheard of). The crab stick dish is a bit innovative also. 😂 Everything else is pretty standard otherwise. It’s not “Hong Kong” style necessarily but if you go to Cantonese dim sum in Guangdong/China I won’t be surprised if you see more non-standard weird stuff. Is that “non authentic”? Hmmm.
