ONE POT CHICKEN & MUSHROOM RICE!
3 cups short grain (Japanese) rice
½ cup chopped onions
¼ cup chopped spring onions
½ kg chicken breast fillet, cut into strips
3-5 pcs. Chinese sausage, sliced
1 cup dried shiitake mushrooms
1 tbsp. grated ginger
2 tbsp. finely minced garlic
2½ cups water
¼ cup oyster sauce
¼ cup soy sauce
2 tbsp. brown sugar
chili flakes, as needed
salt and pepper, to taste
¼ cup spring onions, for topping
sesame oil, for topping

I just made this dish for lunch, my family loved it. I added mirin and sweet black sauce for seasoning and spinach (bok choy would have been perfect). The verdict, it was just like the claypot chicken rice they sell in Singapore. Haven’t achieved the crispy edges because it was served as soon as the heat was turned off. Thank you for doing this dish, it’s now added to my regular weekend dishes.

You can buy it in Biñan Laguna at chef rv restaurant. I'm not sure if they sell those pots online though. But definitely the only place i saw them being sold is at the resto.

Wala pang one week naka purchase nako since muntinlupa lang kami dahil di ko akalaing bibilhin agad ng anak ko...biniro ko lang at thru courrier at nakatulong pa kami kay juya rider dahil bukod sa tip ay nabentahan pa kami ng sideline nya dahil kapapanganak lang daw ng misis nya kaya...."
