when i make my lasagna soup, i put the ricotta at the bottom of the bowl then layer the soup on top. it melts but you still get a bite of ricotta in every spoonful. 🙌🏼

I made this today and everyone loved it. My bf said it was the best soup I've ever made. I used chicken stock instead, a little extra garlic. It was a little too thin fir me so I added a bit more pasta and used wonder flour to thicken it. Came out perfect! I also had to use mozz cheese in the soup because I didn't have parm. I added fresh mozz on top and a spoon of ricotta (a tiny dash of adobo on the ricotta for more flavor)

I made Delish's version of this a couple months ago (with tiny alterations) and it was perfect but I'm dying to use ricotta now. I'm definitely putting a dollop on top (or better yet the bottom)! Although I definitely agree about the toppings making things difficult. The cheese at the bottom made washing the pot harder.

I'm watching this while confined to only foods I can suck through a straw... I broke my jaw along with my cheekbone, left shoulder, and pelvis in a car crash and my jaw is wired closed while it heals. Basically, it's like I'm gritting my teeth for 6 straight weeks lol. luckily the crash was nobody's fault, the tire on the drivers side malfunctioned and basically the treads just peeled off of it as I was driving down the highway going to class so it's good nobody had to feel guilty. Nobody else was hurt so I'm grateful for that too. It's torture not being able to chew anything and eat normal food though lol. You have no idea how badly I want French fries...
