One Pot Pesto Orzo with Zucchini
Ingredients:
zucchini - 2 (small)
shallot - 1 (medium)
garlic - 2 cloves
olive oil - 2 tbsp
salt - 1 tsp
vegetable broth (low sodium) - 2 cups
black pepper (to taste)
oregano - 1 tsp
thyme - 1 tsp
orzo - 1 cup
lemon juice - 1 1/2 tbsp (=half a medium lemon)
for Pesto:
olive oil - 1/4 cup
Genovese basil - 1 cup
garlic - 1 clove
pine nuts - 2 tbsp
grated parmesan - 4 tbsp
Steps:
1. Chop two small zucchini, one medium shallot, and two cloves of garlic.
2. Add 2 tbsp of olive oil to the frying pan.
3. Add chopped shallot and simmer for 3-4 minutes (medium heat).
4. Add chopped garlic and simmer for 1-2 minutes.
5. Add chopped zucchini and simmer for 3-4 minutes. Add one teaspoon of salt, oregano, thyme, and black pepper (to taste).
6. Add orzo. Toast it for 2-3 minutes (medium heat).
7. Pour 2 cups of hot vegetable broth (low sodium).
8. Bring to a boil and reduce heat to low.
9. Simmer for 8 minutes (lid on), stirring occasionally.
10. Remove the lid. Turn off the heat. Add lemon juice and pesto. Mix it.
for Pesto
1. Take olive oil (1/4 cup), fresh basil (1 cup), pine nuts (2 tbsp), and grated parmesan (4 tbsp).
2. Chop one clove of garlic.
3. Blend it.
