Let me get this straight In GTA: San Andreas (the old one) Was just some low quality graphics game and the version is old. Some minor problems and bug fixes in game too (like the npcs or ai) and the game physics bugs. In GTA: San andreas (Definitive Edition) Was just a game that there's an RTX Geforce inside of it or increasing the graphics quality, and there some minor problems to the game physics too (just the same as the old San Andreas game).

Where did all the color go? I didn't know making things more realistic meant cranking up the brightness and removing saturation

I guess this is a result of the new lighting system, since the original didn't have real light, now the color can look a bit washed out because of the light hitting them. I think aside from that there's no change in color.
