Cooking soda is not harmful. Only one vitamin in B complex group will not be absorbed. We can’t be with that for certain dishes.

Good mam you u use gn oil for frying. It is best . doulble filtered gn oil.is safe and ideal. With all nutrition. For other cooking purposes til oil or nalennai is good . I am your follower from my premarriage days. I am saying this about oils as my husband is an edible oil technologist. I follow this oik pattern oily additionally I used purr home made gher.

What oil you used? If it is chekku ennai use a tiny bit of tamarind , fry in oil and take out. If you deep fry after that , it will not have much froth.

You can omit soda and ghee. Use one ladle of hot oil to the flour.Deep fried dishes will add only calories not nutrients.

Soak raw rice in water for half an hour. Drain water on a colander and keep it for few minutes. Spread on a cloth and keep over night . Mill it next day and dry in shade for a day.Sift and use it whenever necessary.

Once deep fried oil can be used for uppuma, Dosa,,Vadakkal Curry and for seasoning . Do not use for deep frying again and again.
