I’m fairly new to pizza making, I purchased a Koda 16 too, but haven’t had the opportunity to test it. I’m currently using a pizza steel in my oven and have been trying to Ooni pizza recipe. I was under the assumption that the dough balls wouldn’t rise in the cold fridge. I have a pizza dough box to proof the dough before making the pizza, any dough balls that I don’t use go in a food bag and placed in the fridge. When I’m going to use them again, I’ll re-ball them and wait for them to hit room temperature in the dough box

This is correct, the doubt won’t rise significantly in the fridge, it just develops the gluten in that period. The room temp is when the rising happens :)

@@trwpizza3021 thanks for the prompt reply. I’m happy with food bags for the fridge and a dough box for proofing, I guess it is personal preference 👍🏽

I’m disappointed that Ooni don’t included the case with the thermometer anymore, I’ll have to see if they sell it separately

Yes they are both sold separately. And both well worth the investment in my opinion. Cheers

@@trwpizza3021 thanks for the quick reply. I had misunderstood as you pulled out the case and thermometer from the packaging, so thought it was purchased as 1 unit. I’ll have a look at there website for the case

Nice review, they look a lot smaller in on the pics on Ooni's site. I was on the fence about them until I saw this. I'll probably order 3 sets, maybe you can stack them 9 high? 4 stacks of 9 would give me enough dough balls for 1 really busy pizza night. Of course that would cost a pretty penny. With your accent I'm guessing you're not in America, pretty penny's slang here for a lot of money lol I know you don't have 3 sets of these, but in your opinion do you think you could have 1 stack of 9 without them tumbling eventually?

Thanks for dropping by J.R. I think as long as they are in a controlled environment a 9 stack will be fine, I.e flat stable surface and no animals/ kids around to Jenga them :). I’ve seen 6 done before absolutely fine. It’s a great product I use mine every time. Just make sure you have a simple round edged soft rubber spatula to help the dough all around the edges prior to flipping it over to drop out. Hope that helps Sir!
