So, the red stripe is a modified wild type red trait, and as such it's dominant to yellow 😉

Where can I learn more about the white fruit genetics? Id like to find / select high phytoene-phytofluene whites.

All the white peppers I know are a combination of low plastid density and yellow mature color. There are likely versions of these genes which produce lower carotenoid levels than others. Seems unlikely they would accumulate phytoene though. I thought tomato had a white fruit mutant but apparently not.

If lower chlorophyll cell means lower carotenoid cell, how would you explain biquinho white ripening into dark red? Just trying to learn here

Yes, but note that I misspoke a little. Chloroplasts exist within cells, they are like mini cells (organelles). In these crosses we see light green (low) and wild type fruit, i.e. normal concentration of chloroplasts. I think that there are other traits for almost no plastid/chloroplast development which are light yellow/red at maturity and nearly white at maturity. Just a different gene, or different allele of the same gene. And I suspect there is a different trait for immature white but mature red/yellow. I actually couldn't find any articles during a short search to explain the one you reference 🤷‍♂️
