It's not just a US thing. In Austria they also have a tradition of eating ham on Easter. When I was there I was told it was because Easter was the end of the religious fasting period, so to celebrate they would eat meat. At the time ham was a relatively cheap option for the common people and with time it became a tradition.

Yea, for some reason a ham dinner is popular for Easter here in the U.S.
